Pudding Cupcakes

Hiya:)

How is everyone? If yall are like us, pretty much inundated with snow.  It was pretty, but now it’s time for it to move on along and let Spring in.  Tomorrow’s high is going to be around 10 F.  The big storm really threw everything into a tail spin around here. The kids were out of school for 3 days. There was a Chili Cook-Off scheduled at the kids’ school that I was going to participate in but it was cancelled.  They’ve rescheduled it but I’m not sure I’m going to be able to do it.  Stay tuned to this space:)

So back to the snow. We got about 24-25 inches or so. And once Paul dug us out….

We spent on afternoon with the kids sledding with our friend Monica and her crew:) That was a lot of fun:)

Then, when we found out that the Chili Cook-Off had been cancelled, Paul surprised us with a last minute trip up to Lake Geneva:) We played at the water park, Paul and Matthew gave snow boarding a go:)

And while they did that, Jamie, Sarah and I went to a Pastry/Dessert class at the Grand Geneva. It was a lot of fun:) Jamie didn’t want to go at first. He wanted to just stay in the hotel lobby and wait for us doing what he does 75% of the day!

I told him no, he was going to come and participate.  There were about 13 of us plus the head Pastry Chef at the Grand:)  We really enjoyed it.  Here are our creations;)

They really worked hard on their’s ;) Me, I was scared to mess mine up so I went for the less is more (and safe!).  Jamie told me before we even finished the class that he was so happy that he decided to come had a blast;)  What was so awesome was that they kept them for us and then brought them to our table after we had an awesome dinner (prime rib and crab legs:).   Perfect ending to a wonderful last minute getaway:)

Needless to say, the kids were worn out from having a great time.  By the time bedtime came Saturday evening, they were ready for bed;)

Now it’s Monday and the kids went back to school. Well, the boys went back to school, Sarah stayed home with a nasty nose.  Today was also Matthew’s best friend, Robert’s, birthday so I made cupcakes (I looooove a cupcake!).  They are fun to eat and fun to make:)  The ones I made today are a cupcake version of the Puddin’ Cake that a friend of mine’s momma used to make when I was younger;)  If you’ve never tried it, may I recommend them:)  The top picture is where I stopped for Robert then I began playing around with butter cream icing and my decorating tips:) Anyway, give them a try!:)

OK, so HERE’S What You Need:

Yellow cake

  • I made a Betty Crocker Yellow cake mix
  • I’ve seen people say they just bought a ready made pound cake at the store and used that.

1 pkg instant pudding (I used chocolate)

1/2 cup confectioner’s sugar

2 cups milk

HERE’S What You Do:

When you take the cake out of the oven (while it's still warm), poke holes about 1 inch apart. I used a straw.

In a bowl, mix your pkg of pudding and confection sugar together...

Pour your 2 cups of milk in and whisk until it's not thick but not runny (You are going to have to pour this over the top of the cake and it'll run down into the holes)

Pour the puddin' over the cakes - I pretty much let it get to thick before I got it over the cupcakes and so... Confession *sighs* It didn't really drizzle down into the holes like it was supposed too :( *looks at her feet and shuffles a little bit* sighs* Sorry:(

**OK so this is where I stopped for Robert and the kids loved them:)  Soooooo… I was looking over at the butter on the counter and rifled through the drawer to find my tips that I hadn’t used yet… So I began to create:)

Threw about a cup of butter over in the mixing bowl, some powdered sugar. Mix mix mix 5 ish minutes on high. Splash of vanilla. Mix mix mix... Taste.. Hmmm more powdered sugar. Mix mix mix. Splash of milk, mix mix mix.. taste. Have Paul taste. Taste again. Mmmm:) Now for the color. Started with green. A bit of blue... ew, it's kinda gray so I don't even remember what color - blue or green but anyway, was happy with the turnout;)

Got to play with my new piping tips:) (Never have used anything other than the plastic things that you get at the grocery store with the store bought stuff). I had some candied cherries and a few sugar flowers so popped those on there and Voila!:) Thought they were really cute:) Enjoy!

French Dressing

Good morning! Ohmugoodness can I tell you how COLD it is here this morning?? My tootsies are freezing. I think I’m going to have to find some warmer socks.  Temps are at zero with windchill around -9F. Burrrrr!!! Spring can’t get here fast enough!

I am so glad it’s the weekend.  Well, it’s the weekend for me because my last class was yesterday. I’m sitting here watching Throwdown with Bobby Flay. He’s doing omelets today. I am totally going to buy an omelet pan… when it warms up that is;)  I think my favorite omelet is the Mitchell at Louie’s Cafe in Baton Rouge.  It’s this dive that is right off LSU campus. They have the BEST food. YuUuMMmM! So I need to venture into making the perfect omelet – when it gets warmer!;)

Well the other night, when I was doing the Thousand Island Dressing, I also made a French dressing. I’m so happy with it. It’s a bit oniony but after it sits overnight, the onion is still there, but the flavors meld together so it’s not so prominent. If you aren’t crazy about onions, just half ‘em:) My friend Marcy sent me her recipes for Greek dressing and Sensational Salad. I can’t wait to give them a try:) Enjoy!

OK, HERE’S What You Need:

1 1/2 cups vegetable oil
1 cup ketchup
3/4 cup sugar
1/2 cup vinegar
1 small onion, chopped
1 teaspoon lemon juice
1 teaspoon paprika
1/2 teaspoon salt

HERE’S What You Do:

Just blend it all together in a blender or food processor and store it in the fridge:) I’d let it sit over night before you use it though. Let those flavors get to know each other;)

    Thousand Island Dressing (and I got a new camera!!:)

    Good morning yall!! Welcome to the new year:)  I hope everyone had a wonderful holiday:)  We spent Christmas up here in the cold barren north but for New Years, we went looking for warmer weather in Miami/Fort Lauderdale.  We got one really nice beach day out at Key Biscayne. The rest of the time we explored:)  I think my FAVORITE place that we went this time was a place called Gumbo Limbo in Boca Raton.  It’s a nature center that also has a sea turtle rehab:)  It’s not an all day thing but it was a great morning trip for us;)  After we left there, we found the BEST pizza place called Authentic Brooklyn Pizza on Palmetto Park Road – also in Boca.  The pizza was great. Not to saucy (just the way my kids like it:) The prices were really good and very friendly service to boot:) Anyway, just thought I’d mention those two because if you’re visiting the area, you may not know about them. We can’t wait to go back to both places:)

    School for the kids and me started back up.  I am taking a Stats and Psych class this semester. I am no good in math or with numbers.  Just hope I can pull it off this semester and get it out of the way.  Oh! And I also started fiddling with my sewing machine. I began making an apron about 2 weeks ago. I’m still making that same apron:(  So, Paul signed me up for a sewing class at Joann fabrics :) I am so excited! Sarah and I both are signing up for crocheting classes as well:) MyMatthew wants to do it too, but I don’t think he and Sarah need to do it at the same time though… that would not go well. She is WAY to bossy and she can crush him like fly with one word. Bless his heart.  So I think two separate times would work best here;) There are so many great classes they offer there, I can’t wait to do them all:)

    SO! I got a new camera:) Well, WE (Paul and I) got a new camera. It was our anniversary gift to each other (our anniversary is Jan 25th – 14 yrs!!)  I’m so excited about cooking with a new camera now:)  All of my other pictures were taken either with my cell phone *yuck!* or with my little point and shoot underwater camera.  The one we have has lots of buttons and a big lens. I have no idea what to do with it so bare with me as I send Paul to a camera class so he can show me  LOL!:)

    Last night, I was experimenting with salad dressings. Paul is a plain guy and he only likes a couple. One of them being Thousand Island or basically for him, ketchup, mayo and a little seasoning. He’s such a plain guy.  So 2 versions I came up with last night:)  I LOVE the second version I made:) I could just put that on some white bread and eat it (Ok, so I actually did that last night. YuuuUUuUuuuuUmm:)  Yall enjoy! (btw, I missed yall:) *hugs*

    Paul’s Thousand Island

    OK, HERE’S What You Need:

    • 2 tablespoons mayonnaise
    • 1/2 teaspoon evaporated milk
    • 1 1/2 tablespoons ketchup
    • 1 dash Worcestershire sauce
    • 1 pinch garlic powder

    HERE is What You Do:

    Mix it all together and stick it in the fridge:) Easy peasy:) It doesn’t make a lot but he doesn’t really eat it a lot. It’d be perfect for 2 salads.  He loves Thousand Island on baked potatoes (with pepperoni. Odd combo, I know).

    Kathryn’s FAVORITE Thousand Island

    OK, HERE’S What You Need:

    1 cup Mayo – I use Hellman’s

    1/4 cup Chili Sauce

    2 hard boiled eggs – chopped

    1T sweet pickle relish

    a good dash (or two) of paprika

    HERE Is What You Do:

    Mix it all up and pour it into your container for the fridge. Take a good soft piece of white bread and clean your mixing bowl of the remaining dressing and enjoy!!! Yum!!

    It’s beginning to look a lot like Christmas!

    Hello all:)

    No I haven’t fallen off the face of the Earth. Just was trying to get through finals at school. I can now say I’m done for this semester at least:) I am so looking forward to getting back into the kitchen and start cooking and baking for the holidays:)  I’ve really missed it.  We are almost done with our shopping but still have a few bits and pieces to buy. Tomorrow, we will be decorating our tree. The kids look forward to that almost as much as Christmas morning;) I make little tea sandwiches and we have all sorts of chips and cookies (mince pies and Cherry Bakewells) to snack on while decorating:)  I just wanted to check in with everyone and say hello. :) See yall soon!
