AuGratin Potatoes and Ham For large groups
Ingredients
- 20 lbs. red potatoes
- 8 lbs. fully cooked ham, cubed
- 4 cans (10-3/4 oz.) cream of celery soup
- 2 quarts milk
- 1/2 cup flour
- 6 lbs. Velveeta, cubed
- 2 teaspoons pepper
- 2 teaspoons paprika
Directions
Cook washed potatoes in their jackets until tender. Cool. Peel and cut potatoes into cubes (not sliced). Place about 6 cups potatoes each into greased 9×13″ pans. Or place all potatoes into a large electric roaster. Add 3-1/2 cups ham to each pan or entire amount to roaster. In a large dutch oven, over medium heat, combine soup, milk, and flour until smooth. Bring to a boil. Cook and stir 2 minutes. Add cheese, pepper, and paprika. Reduce heat and stir until cheese is melted. Pour 2-1/4 cups into each pan or entire amount into the roaster.
Cover and bake pans for 40 minutes at 350 degrees. Uncover and bake 5-10 minutes more. For roaster heat through, approximately 3 hours at a medium-low heat stirring occasionally.
Serves approximately 100 – 3/4-cup servings. NOTE: Do not add any salt during the entire cooking process.
