Sunshine Cake
Ingredients
- 1 (18.25-oz.) box of yellow cake mix
- 4 eggs
- 1 stick butter or margarine
- 1 (11-oz.) can Mandarin oranges, undrained
- 1 (11.1-oz.) Jell-O No Bake Cheesecake Mix, filling packet only
- 1 tbl. sugar
- 1 (20-oz.) can crushed pineapple, undrained
- Almost 16 ozs. sour cream
- 1 (12-oz.) container Cool Whip, thawed
Directions
1. Mix cake mix, eggs, butter or margarine and undrained oranges and blend in mixer on medium speed for 2 minutes.
2. Grease and flour 3 (9-inch) round cake pans (I use the butter-flavored nonstick vegetable cooking spray). Divide batter evenly among the 3 pans. Bake in a preheated 325-degree oven for 20 minutes. Cool completely before removing from pans.
3. Combine filling packet from Jell-O No Bake Cheesecake Mix, sugar, undrained pineapple and almost all of the sour cream. Gently fold in Cool Whip and frost between layers and on top and sides of cake. This makes lots of frosting, so you can be generous.
