Famous Oatmeal Cookies
Ingredients
- 3/4 cup shortening
- 1 cup firmly packed brown sugar
- 1/2 cup granulated sugar
- 1/4 cup water
- 1 egg
- 1 tsp. vanilla
- 3 cups regular or quick-cooking oats, uncooked
- 1 cup all-purpose flour
- 1 tsp. salt, optional
- 1/2 tsp. baking soda
- 1/2 cup dried sweetened cranberries
- 1/4 cup flaked sweetened coconut
- 1/2 cup white chocolate chips
Directions
1. Preheat oven to 350 degrees. Beat together shortening, sugars, water, egg and vanilla until creamy.
2. Add remaining ingredients and mix well.
3. Drop by rounded teaspoonfuls onto greased cookie sheet or parchment-lined cookie sheet. Bake at 350 degrees for 12 to 15 minutes or until lightly browned. Cool 5 minutes and remove cookies to cookie racks to finish cooling.
Note: When completely cooled, pack cookies in plastic, self-sealing bags. Place the bags of cookies in boxes that are insulated with packing material or newspaper. The package mail stores are helpful with showing you how to securely wrap and package cookies to send overseas.
Makes about 5 dozen.
