Lazy Womans Enchiladas
Ingredients
- 1 pound hamburger
- 1 onion, diced
- 1 can refried beans
- 1 can spanish rice (may substitute prepared packaged spanish rice)
- 1 packet taco seasoning
- 8 ounces cheddar cheese, divided
- 8-10 flour taco shells
- 2 cans enchilada sauce
Directions
Brown hamburger and onion, drain. Add beans, rice, taco seasoning and cheddar cheese.
Stir well. Place one scoop on each taco shell and roll up, placing in a greased 9×13 pan.
(I pour 1 can of enchilada sauce on the bottom of the pan) Repeat with remaining shells
and mixture. Top with remaining can of enchilada sauce and an additional 4 ounces of
cheddar cheese. Bake at 350 for about 30 minutes or until hot and cheese is toasty. Serve
with salsa, sour cream, lettuce, tomatoes, and
onions. Keeps for several days and freezes well.
