Cajun Cheddar Cheese Biscuits

Ingredients

  • 3 cups Pioneer Buttermilk Baking Mix or Bisquick Buttermilk Baking Mix
  • 2 heaping tbls. sour cream
  • 1/2 to 3/4 cup finely minced and sautéed andouille sausage(if andouille is not available, you can use smoked sausage like Hillshire Farms)
  • 1 1/2 to 2 cups finely shredded sharp Cheddar cheese
  • 1/4 tsp. Creole seasoning
  • Half-and-half
  • Cold butter



Directions

1. Place biscuit mix, sour cream, cooled sausage, cheese and seasoning in a large bowl. Stir in enough half-and-half for a nice dough.

2. Flour hands with some all-purpose flour and place a large heaping tablespoon of dough in your hands and gently shape the biscuits. Biscuits should be at least 2 inches in diameter or larger and about 1/2-inch thick. Place on a sheet pan sprayed with nonstick cooking spray or lined with parchment.

3. Using your forefinger, make a slight indentation on top of each biscuit and top with a little cube of cold butter. Place biscuits in a hot oven (425 degrees preheated) and bake for 10-14 minutes until lightly browned. Serve immediately.

These are great with apple jelly or even hot pepper jelly.
