Old English Gingerbread
Ingredients
- 225g (8oz) plain flour
- 150ml (1/4 pint) milk
- 4-5 tsp ground ginger – depends on personal preference
- 100g (4oz) butter or margarine
- good pinch of bicarbonate of soda
- 2 eggs
- 100g (4oz) soft brown sugar
- 100g (4oz) black treacle
Directions
oven setting: 150 oC/ 300 oF/ Gas Mark 2
1. Preheat oven and grease 450g loaf tin
2. Sift together the flour, ginger, bicarbonate of soda and sugar
3. Warm the milk and dissolve the butter/marg in it. DO NOT BOIL.
4. Beat the eggs
5. Add the beaten eggs and treacle to the dry ingrediants.
6. Add the milk and butter mixture. Beat well. The mixture should be really runny.
7. Pour into prepared tin and bake for 35minutes. Then lower the heat to a very cool (130oC/ 275 oF/ Gas Mark 1/2-1) for 25minutes.
Classic English favourite. A beautifully dense cake. Good by itself; as a pudding with vanilla ice-cream; or even toasted and buttered at tea time! Perfect.
