Cheesy Corn Casserole

Ingredients

  • 3 eggs, beaten
  • 16 ounces white or shoepeg corn
  • 1 cup shredded pepper Jack cheese
  • 1 cup shredded Monterey Jack cheese
  • 2 ounces diced pimientos, drained



Directions

* Heat oven to 350 degrees. In a large bowl, combine eggs, corn, cheeses and pimientos.

* Transfer to a greased 2-quart baking dish. Bake, uncovered, for 35 to 40 minutes or until bubbly.

Makes 6 servings.
