After Thanksgiving Salad

Ingredients

  • 1 tablespoon sweet pickle relish
  • 3/4 cup mayonnaise
  • 4 cups shredded cooked turkey or chicken
  • 1 hard-cooked egg
  • 1/2 cup chopped pecans



Directions

In a bowl, mash the egg with a fork. Add turkey, mayonnaise and relish. Cover and refrigerate until serving. Stir in pecans just before serving.

Total time: 15 minutes

Almond Chicken Stir-Fry

Ingredients

  • 1 pound boneless skinless chicken breasts, cut into thin strips
  • 3/4 cup sliced almonds
  • 1 tablespoon canola oil
  • 1 package (16 ounces) frozen broccoli stir-fry vegetables
  • 1 tablespoon cornstarch
  • 1 tablespoon brown sugar
  • 1/2 teaspoon ground ginger
  • 1/3 cup unsweetened pineapple juice
  • 1/3 cup reduced-sodium soy sauce
  • Hot cooked rice, optional



Directions

In a large nonstick skillet or wok, stir-fry chicken and almonds in hot oil for 2 minutes. Add vegetables. Reduce heat to low; cover and cook for 4 minutes or until vegetables are tender and chicken is no longer pink.
In a small bowl, combine the cornstarch, brown sugar and ginger. Stir in pineapple juice and soy sauce until smooth. Stir into chicken mixture. Bring to a boil; cook and stir for 2 minutes or until thickened. Serve with rice if desired.

Angel Hair with Tomatoes, Basil and Garlic

Ingredients

  • 3/4 cup low-sodium chicken broth
  • 1/2 tsp. basil
  • 5 cups tomatoes, diced
  • 1 tbsp. minced garlic
  • 2 tbsp. vegetable oil
  • 1 pound Angel Hair or Capellini, uncooked
  • 3/4 cup low-sodium chicken broth
  • Salt and freshly ground pepper to taste

Directions

Prepare pasta according to package directions; drain. Heat oil in a large skillet over medium-high heat. Add garlic and cook for one minute. Add tomatoes, basil, salt and pepper. Cook for 3 minutes. Add hot pasta to skillet; toss well. Add chicken broth and stir. Toss with Parmesan cheese and serve immediately.

Aunt Kates Muffins

Ingredients

  • 3 cups Bisquick
  • 1 can warm beer
  • 1/4 cup sugar
  • 1 tsp cinnamon (optional)



Directions

Mix and put into muffin tin. Bake at 350(F) for 10-15 minutes.

Aunt Kathys Stroganoff

Ingredients

  • 1 lb ground chuck
  • 1 onion, chopped
  • 8 oz. fresh mushrooms, washed and sliced (stems removed)
  • salt, pepper and garlic powder to taste
  • 1 can cream of mushroom soup
  • carton of sour cream
  • fresh cooked rice or egg noodles



Directions

In a skillet, brown your ground chuck with your onions, mushrooms and season to taste.
Drain excess fat. Stir in can of soup (do not add water). Right before you serve it, add your sour cream and heat through (do not bring to a boil). Serve over hot white rice or freshly cooked egg noodles.

I love her stroganoff:)

Sometimes I will use sirloin sliced very thin instead of hamburger. So good!
