Bean Burgers

Ingredients

  • 2 cups cooked beans
  • 2/3 cup ground sunflower seeds
  • 1/4 cup chopped onion
  • 1/2 teaspoon chili powder
  • 1 teaspoon salt
  • 2 tablespoons oil
  • 3 to 4 tablespoons catsup



Directions

Combine all the ingredients, adding enough wheat germ (about 1/2 cup) to hold the shape. Form into 8 patties. Place on a lightly oiled baking sheet and bake at 350 degrees F for 15 to 20 minutes. Place a slice of cheese on each burger and place under broiler heat to melt before serving.

Beef Stacks

Ingredients

  • 1 lb. beef fillet steak
  • 1/2 lb. cheddar or swiss cheese, thinly sliced
  • 4 marinated artichoke hearts, plus some liquid, OR 4 pickled onions, plus some liquid
  • salt and pepper to taste



Directions

Prepare and heat grill, if using. Sprinkle beef with salt and pepper and cook on grill or under broiler for about 14-16 minutes (medium), until desired doneness, turning once during cooking. Cover with foil and let rest for 15 minutes, then slice very thinly against the grain. Slice onions or artichoke hearts very thinly.
Layer beef and cheese slices on each plate. Top with slices of artichoke heart or onion and drizzle with some of the pickling liquid. Season with salt and pepper, if desired.

Beefy Corn Chili

Ingredients

  • 1 lb ground beef
  • 1 can (15 oz) spicy chili beans, undrained
  • 1 can (14.5 oz) diced tomatoes, undrained
  • 1 can (11 oz) whole kernel corn, undrained
  • 1 can (4.5 oz) chopped green chilies
  • shredded monterey jack cheese



Directions

Cook ground beef over medium-high heat until thoroughly cooked; drain well. Stir in remaining ingredients. Cook over medium heat 10 to 15 minutes. Serve topped with shredded cheese.

BEST FUDGE PIE

Ingredients

  • 1 STICK MARGARINE
  • 1 CUP SUGAR
  • 3 T. COCOA
  • 2 EGGS
  • 1/4 CUP SELF RISING FLOUR
  • 1 TSP VANILLA
  • 1 9 INCH UNBAKED PIE CRUST



Directions

MELT MARGARINE IN MIXING BOWL. USING A WIRE WHISK, ADD SUGAR, COCOA AND FLOUR UNTIL WELL BLENDED. ADD EGGS AND VANILLA. BEAT WELL BY HAND. POUR INTO BAKED PIE SHELL. BAKE 350 DEGREE FOR 30 MINUITES. YIELD: 8 SERVINGS. THIS PIE IS EXCELLANT SERVED WARM AND TOPPED WITH WHIPPING CREAM OR VANILLA ICE CREAM.

Black Bean Lasagna

Ingredients

  • 2 cups chunky tomato sauce
  • 2 (14-ounce) cans black beans, rinsed and drained
  • 5 (8-inch) flour tortillas
  • 2 cups Mexican blend shredded cheese
  • 1/4 cup diced green onions



Directions

Preheat oven to 350 degrees. In an 8-by-8-inch baking dish, cover the bottom with 1/2 cup tomato sauce. Mix remaining sauce and black beans together. Place one tortilla in the dish (you might need to fold the edges around the dish). Place 1/4 of the bean mixture on top of the tortilla. Sprinkle with cheese. Repeat layers, ending with a tortilla and the remaining cheese on top. Cover and bake for 20 to 25 minutes. Sprinkle diced green onions on top and serve.

Top with chopped scallions, tomatoes, guacamole or sour cream.
