Oyster Stew

Ingredients

  • 3 cups milk
  • 1/4 cup butter
  • 1 quart shucked oysters and their liquor
  • 1 cup heavy cream
  • 1/2 teaspoon salt
  • Freshly ground black pepper
  • Nutmeg (optional)



Directions

Warm the milk in a heavy saucepan over low heat until hot but not simmering.

Melt the butter in another pan. Add the oysters and their liquor to the melted butter. Heat the oysters until their edges begin to curl or ruffle. Add the hot milk, the cream, salt and pepper to taste and a few gratings of nutmeg if desired.

Serves 8.

Pasta, Tuna and Sweetcorn Salad

Ingredients

  • 165g pasta shapes, cooked without salt until just tender
  • 1 can tuna in spring water, drained – approx 150g
  • 1 small can sweetcorn in water, drained, or 150g frozen sweetcorn.
  • Juice of half lemon
  • Black pepper



Directions

Method

* Combine all the ingredients, and season with black pepper, and fresh herbs if you have them.
* Chill.

This will keep a day or two in the fridge in an airtight container.
Alternatives

* Add cooked beans, or a can of kidney beans, drained.
* Use other vegetables such as diced peppers, cucumbers, or cherry tomatoes.

[NB] Canned tuna in brine is much cheaper than in water. If you wish to use tuna in brine, drain off all the liquid carefully and ensure you do not add any salt.

Peppered Sirloin Steak

Ingredients

  • 2 1/2 lb sirloin steak
  • 1/2 cup butter
  • 1/4 cup fresh parsley
  • 2 Tbl Worcestershire sauce
  • 1/4 cup onion, minced
  • 1 tsp pepper
  • 1/2 tsp dry mustard



Directions

Preheat broiler. Lightly score edges of steak at one inch intervals. Combine butter, parsley, Worcestershire sauce, onion, pepper and mustard in a small saucepan. Over low heat, stir mixture until butter melts; set aside 1/4 cup. Place steak on broiler pan and brush wit butter mixture. Broil, basting often with butter mixture, approximately 6 minutes on each side of steak. Remove to a serving platter, slice across the grain and drizzle with reserved butter mixture.

Quick and delicious – only 15 minutes!

Pizza Baguettes

Ingredients

  • a baguette or french bread
  • pasta sauce either from a jar or your own (Crushed tomatoes, puree and garlic)
  • grated cheese
  • Toppings: Sliced mushrooms, peppers, onion, chilli slices, ham, pepperoni etc etc



Directions

You get a baguette or french bread, whichever you wanna call it. Cut it lengthways and
in half so you have pieces around ten inches long. Spread on a pasta sauce either from a jar or your own (Crushed
tomatoes, puree and garlic) cover with a layer of grated cheese, then add your required topping. Suggestions
are… Sliced mushrooms, peppers, onion, chilli slices, ham, pepperoni etc etc. sprinkle a bit more cheese over
the top and grill for about 5 minutes or so on a low heat until the cheese has melted. If you prefer your topping
to be soft, I.e peppers and onions then you can cook these off a bit first to soften. Thats basically it. Very
very easy and quick if you are in a rush

Quick Chicken Soup

Ingredients

  • Two 5-oz. cans chunk style chicken, drained and chopped
  • One 10-oz. package frozen peas,
  • One 7-1/2 oz. can tomatoes, undrained, cut up
  • 2 stalks celery, sliced
  • 1 medium carrot, sliced
  • 1 medium onion, sliced
  • 1 tablespoon instant chicken bouillon granules
  • 1/2 teaspoon dried, crushed rosemary
  • 3 cups water
  • 1 cup uncooked noodles



Directions

Place all ingredients into a large saucepan. Bring to a boil, Reduce heat and simmer, covered, for 15 minutes or until the vegetables are cooked. 4 servings.
