Baked Ham

Ingredients

  • 1 whole, “fully-cooked” ham (about 10 pounds)
  • 1 cup brown sugar
  • 1/2 cup honey
  • Whole cloves
  • 1 large can sliced pineapple
  • 1 small bottle Coca-Cola
  • Preheat oven to 325 degrees. Trim the outer layer fat from ham. Place the ham in large pot with water to cover. Bring to the boil and boil for about 20 minutes.

Remove from the water and place on a rack in shallow pan, uncovered. In a small bowl, mix together the brown sugar and honey. Rub this mixture all over the outside of the ham. Stud the outside of the ham with cloves and decorate with pineapple rings.
Pour the Coca-Cola over the entire ham. Cover loosely with foil and bake for 30 minutes to an hour or until the internal temperature reaches 140 deg

Baked Hamburger

Ingredients

  • 1 pound ground chuck
  • milk
  • mustard
  • Worcestershire sauce
  • butter



Directions

To 1 pound ground chuck, add a little milk to soften. Roll flat in pan. Spread over with mustard. Shake over Worcestershire sauce. Dot with butter. Bake for 30 minutes at 350 degrees. Add salt if desired. Toast buns. Have ready onions and pickle slices.

Baked Spiral Ham

Ingredients

  • 1 large onion, sliced
  • 2 tablespoons butter or margarine
  • 1 fully cooked spiral ham (7 to 9 pounds)
  • 1-1/2 cups chicken broth
  • 1 cup red wine or additional chicken broth



Directions

In a small skillet, saute the onion in butter until tender; transfer to a roasting pan. Place ham on top. Pour the broth and wine or additional broth over ham. Bake, uncovered, at 325° for 2-3 hours or until a meat thermometer reads 140° and ham is heated through.

Yield: 12-15 servings.

BBQ Flank Steak

Ingredients

  • 1/4 cup soy sauce
  • 3 tablespoons honey
  • 2 tablespoons vinegar
  • 1-1/2 teaspoons garlic powder
  • 1 tablespoon fresh minced ginger
  • 1/2 cup salad oil
  • 1 green onion, finely chopped
  • 1-1/2 pounds flank steak



Directions

Mix soy sauce, honey and vinegar; blend in garlic powder and ginger. Add oil and chopped green onion. Put meat in plastic bag with marinade and let stand at least four hours. Grill over glowing coals until cooked to your taste. If you wish to baste the steak with sauce while grilling, be sure to make a separate batch of sauce for marinating.

Beef & Beer Chili

Ingredients

  • 1 1/2 cups chopped red onion (about 1 medium)
  • 1 cup chopped red bell pepper (about a small)
  • 8 ounces extra lean ground beef
  • 2 garlic cloves, minced
  • 1 1/2 tsp chili powder
  • 2 tsp ground cumin
  • 1 tsp sugar
  • 1 tsp salt
  • 1/2 tsp dried oregano
  • 1 (19-ounce) can red kidney beans, drained
  • 1 (14.5-ounce) can no-salt-added diced tomatoes, undrained
  • 1 (14-ounce) can low-sodium beef broth
  • 1 (12-ounce) bottle beer
  • 1 tbsp yellow cornmeal
  • 1 tbsp fresh lime juice



Directions

Combine first 4 ingredients in a large pot over medium-high heat. Cook 5 minutes or until beef is browned, stirring to crumble. Stir in chili powder, cumin, sugar, and salt; cook 1 minute. Add oregano and next 4 ingredients (through beer)to pot; bring to a boil. Reduce heat, and simmer 15 minutes. Stir in cornmeal; cook 5 minutes. Stir in juice.

Yield: 4 servings (serving size: 1 1/2 cups).
