Dixie Spice Cake

Ingredients

  • 2 1/2 tsps. baking powder
  • 1 1/3 cups sifted brown sugar
  • 1/2 cup milk
  • 1/2 tsp. nutmeg
  • 1/2 tsp. cinnamon
  • 2 cups sifted flour
  • 2 eggs
  • 1/3 cup butter
  • 1 cup chopped raisins
  • 1/2 tsp. salt



Directions

1. Put all ingredients together in bowl and beat thoroughly until smooth.

2. Bake in one 8- or 9-inch cake pan at 350 degrees 20 minutes. Bake as cupcakes for 15 minutes.

3. Ice with white or caramel icing, if desired.

Makes 1 cake.

Double Chocolate Banana Muffins

Ingredients

  • 3/4 cup all-purpose flour
  • 1/2 cup whole wheat flour
  • 1 cup sugar
  • 2 tbsps each wheat germ, wheat bran, quick oats, ground flaxseed
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 2-3 tbsp cocoa
  • 3 medium-ripe bananas
  • 1 egg
  • 1/3 cup vegetable oil
  • 1 tsp vanilla
  • 3 tbsp apple sauce, unsweetened
  • 1/2 cup chocolate chips



Directions

Mix all dry ingredients together in large bowl. In food processor, mix bananas, egg, oil, vanilla and applesauce until smooth. Pour into dry ingredients and mix until just moistened; fold in choc. chips. Spoon into muffin pan lined with paper cups. Bake at 350-375 oven for about 15-20 minutes or until done.

Dr. Pepper Cake

Ingredients

  • 1 box German chocolate cake mix
  • 1 (3 1/2 ounce) box instant vanilla pudding
  • 2/3 cup oil
  • 3 eggs
  • 1 (12 ounce) can Dr. Pepper
  • 1 teaspoon vanilla
  • Frosting:
  • 1 (8 ounce) package cream cheese, softened
  • 1 stick margarine
  • 1/4 cup cocoa
  • 1 teaspoon vanilla
  • 1 pound box powdered sugar
  • 1 cup chopped pecans



Directions

Cake –

Combine first three ingredients,(cake mix, pudding and oil), beating with mixer until well blended. Add eggs, one at a time, beat in well after each addition. Add soda and vanilla; mix well. Bake at 325 degrees for 35 minutes before removing. Frost when cool.

Frosting -

Beat first five ingredients until light and fluffy. Mix in pecans and frost cake.

Dutch syrup cake (Hollandse stroopkoek )

Ingredients

  • 100 grams currants
  • 100 grams raisins
  • 75 grams walnuts
  • 400 grams flour
  • 3 tsp baking powder
  • salt
  • 3 tsp all spice
  • 3 tsp thick Dutch syrup
  • 1 can of beer
  • 125 grams butter



Directions

Soak the currants and the raisins for 30 minutes. Chop the walnuts. Sift the flour and baking powder, add salt and the all spice. Mix the syrup with the beer and mix in the melted butter. Set the mix aside to cool. Then, bit by bit, add the beer, mix through the flour, beat it well. Add the walnuts and drained raisins and currants.

Pour the dough into a greased and floured cake pan. Bake the cake for about 75 minutes at 175ºC/345ºF in a preheated oven.

Dutch Triple Treat

Ingredients

  • 1 box chocolate cake mix
  • 1 box chocolate pudding (regular, not instant)
  • 1 pkg. chocolate chips
  • nuts



Directions

Cook pudding until thick. Add chocolate cake mix. Mix well. Pour into a large loaf cake pan. Sprinkle with chocolate chips. Bake at 350(F) approximately 20 minutes or longer until done. Sprinkle with nuts.

Note: Tube or oblong pan 9x12x2 may be used)
