Bundt Coffee Cake

Ingredients

  • 1 pkg yellow cake mix
  • 4 eggs
  • 3/4 cups oil
  • 1 – 3oz pkg instant vanilla pudding
  • 3/4 cup water
  • 1 tsp vanilla
  • 1/2 cup sugar
  • 5 tsp cinnamon



Directions

Mix together: Cake mix, eggs, oil, pudding, water and vanilla. Beat 2-3 miutes. Grease and flour pan or Bundt pan.

Mix together 1/2 cup sugar and 5 tsp cinnamon. Pour half the batter into pan. Sprinkle half sugar mixture on top. Take knife and swirl. Pour other half of batter on top and sprinkle other half of sugar mixture and swirl. Bake at 325 for approximately 1 hour. Can put glaze on if desired.

Butter Almond Cake

Ingredients

  • 1 1/2 cups sugar
  • 3/4 cup melted butter
  • 2 eggs
  • 1 tsp. almond extract
  • 1 1/2 tsps. vanilla
  • 1/4 tsp. salt
  • 1 1/2 cups flour
  • 3 tbls. sliced almonds for topping
  • 1 tbl. sugar for topping



Directions

Preheat oven to 350 degrees.
Grease and flour a 9-inch round cake pan.
In bowl, whisk sugar and melted butter together. Beat in eggs. Stir in almond and vanilla extracts.
Add salt and flour. Mix well.
Spread batter in prepared pan. Sprinkle almonds and sugar over the top.
Bake in preheated 350-degree oven for 30-35 minutes or until lightly browned.
Cool slightly. Carefully run a knife around edges to loosen and turn out onto rack. Invert onto serving dish.
Makes 1 (9-inch) cake layer, serves 8.

Buttermilk Chocolate Cake

Ingredients

  • 2 sq unsweetened chocolate, melted
  • 2 tsp vanilla
  • 2 eggs, well beaten
  • 1 cup dark Karo syrup
  • 1/4 cup margarine
  • 1 cup semi-sweet chips
  • 2/3 cup sugar
  • 2/3 cup shortening
  • 2 tsp baking soda
  • 1tsp salt
  • 2 cups all-purpose flour
  • 1 1/2 cups buttermilk
  • 1 1/2 cup powdered sugar
  • 1/3 cup Carnation evaporated milk



Directions

Cream shortening. Gradually add sugar, creaming well until light and fluffy. Add Karo syrup. Beat well. Add eggs, vanilla and melted chocolate. Mix well. Add dry ingredients alternately with buttermilk. Stirring just until smooth, after each addition. Pour batter into greased and floured 9 inch round pans. Bake at 350(F) for 40-45 minutes.

Frosting: Mix together semi-sweet chips, powdered sugar, margarine and evaporated milk. Spread over cake.

Buttermilk Crumb Cakes

Ingredients

  • 2 1/2 cups flour
  • 1 teaspoon baking powder
  • 1 1/2 cups sugar
  • 1/2 cup shortening
  • 1 cup buttermilk
  • 1 teas. baking soda
  • 2 eggs, beaten
  • 1/2 teas. salt



Directions

Mix flour, baking powder, sugar & shortening like pie crumbs. Take out 1/2 cup crumbs for tops of cakes. Add other ingredients and mix well. Bake at 375 degrees in two greased & floured 8″ round cake pans for 20 – 30 minutes.

Buttermilk Pound Cake

Ingredients

  • 1 cup butter
  • 3 cups sugar
  • 4 eggs
  • 3 cups sifted flour
  • 1/4 tsp soda
  • 1 cup buttermilk



Directions

Preheat oven to 350(F). Cream butter and sugar until light and fluffy. Add eggs one at a time, beating one full minute after each addition. Sift flour before measuring. Mix soda in buttermilk and add alternately with flour to butter-egg mixture. Bake in tube pan or 2 loaf pans. Freezes very well.
