Ingredients

  • 1 package (3oz.) cream cheese,softened
  • 1/2 cup butter or margarine
  • 1 cup all-purpose flour
  • Filling:
  • 3/4 cup packed brown sugar
  • 1 tablespoon butter or margrine, softened
  • 1 egg
  • 1 teaspoon vanilla extract
  • dash salt
  • 2/3 cup finely chopped pecans, divided



Directions

For pastry, blend cream cheese and butter until smooth:stir in flour. Chill about 1 hour. Shape into 24 1-in. balls. Place in ungreased minature muffin tins or small cookie tarts:press the dough against bottom and sides to form shell. Set aside. In bowl, beat brown sugar,butter and egg until until combined. Add vanilla,salt and half the pecans:spoon into pastry. Top with remaining pecans. Bake at 375 degrees for 20 minutes or until filling is set and pastry is light golden brown. Cool and remove from pans

Texas Rich Pecan Pralines

Ingredients

  • 2 cups sugar
  • 1 cup buttermilk
  • 1 tsp.soda
  • pinch of salt
  • 2 tbsp.butter
  • 2 1/3 cups pecan halves



Directions

In a heavy saucepan,combine first 4 ingredients
over medium heat.Cook 5 minutes or until candy forms a soft ball when a small amount is dropped in cold water.(230 degrees 0n a candy thermometer).Remove from heat;cool 15-20 minutes.Beat until creamy.Drop by tablespoon onto
wax paper.Chill.Makes about 30.

White Chocolate Fudge

Ingredients

  • 1 (8oz) cream cheese, softened
  • 4 cups powdered sugar
  • 1 1/2 t. vanilla
  • 12 oz. white choc. chips or bark
  • 3/4 cup chopped pecans

Directions

in medium bowl, beat cream cheese in mixer. Graduall add in powedered sugar and vailla and mix until smooth. Melt white chocolate in microwave, make sure not to overcook, by cooking one minute at a time, then stirring. Add melted chocolate to mixture and beat until smmoth. Site in pecans. Pour mixture into butter-greased 8×8 inch pan. Chill in refrigerator until firm. Cut into small squares
