Chuck Wagon Meatloaf

Ingredients

  • 2 tbls. butter or margarine
  • 1 medium onion, chopped
  • 1 medium green bell pepper, chopped
  • 2 lbs. ground beef
  • 1 (16-oz.) jar picante sauce
  • 40 saltine crackers, finely crushed
  • 3 eggs, beaten
  • 1/2 cup enchilada sauce



Directions

1. In 12-inch skillet, melt butter over medium heat. Add onion and pepper and cook until tender.

2. Mix thoroughly ground beef, picante sauce, crushed crackers and eggs. Add onion mixture.

3. Shape into 8×4-inch loaf and place in 13x9x2-inch baking pan. Bake at 350 degrees for 1 hour.

4. Pour enchilada sauce over meatloaf. Bake 5 more minutes.

Serves 8.

Clean Your Plate Casserole

Ingredients

  • 8 ounces fine egg noodles
  • 1 pound lean ground beef
  • 1 can stewed tomatoes – 16 oz.
  • 1 can tomato sauce – 8 oz.
  • 2 teaspoons salt
  • 2 teaspoons meat seasoning
  • 2 teaspoons sugar
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon black pepper
  • 1 cup sour cream
  • 3/4 cup green onion, chopped
  • 3 ounces cream cheese
  • 1 1/2 cups cheddar cheese, grated



Directions

Cook noodles according to package directions.
Brown ground beef. Drain beef and add the next 7 ingredients.
In a medium size bowl, mix sour cream, onions, and cream cheese.
Mix beef mixture with sour cream mixture. Combine with noodles in a 9 X 13 inch casserole dish.
Cover with cheddar cheese. Bake at 350 for 30 minutes.

Comforting Broccoli Casserole

Ingredients

  • 2 eggs, lightly beaten
  • 1 can (10-3/4 ounces) condensed cream of mushroom soup, undiluted
  • 1 medium onion, chopped
  • 1 cup (4 ounces) shredded cheddar cheese
  • 1 cup (4 ounces) shredded Swiss cheese
  • 1/2 cup mayonnaise
  • 2 tablespoons butter, melted
  • 1 package (16 ounces) frozen broccoli cuts, thawed
  • 1 package (10 ounces) frozen chopped broccoli (about 3 cups), thawed
  • 1/4 cup dry bread crumbs



Directions

In a large bowl, combine the first seven ingredients; fold in broccoli. Transfer to a greased 1-1/2-qt. baking dish. Sprinkle with bread crumbs. Cover and bake at 400° for 30-35 minutes or a meat thermometer reaches 160°.

Company Casserole

Ingredients

  • 1 pound lean hamberg
  • 8 oz Noodles
  • 8 oz Cottage Cheese
  • 3 oz Cream Cheese
  • 4 oz Sour Cream
  • 3/4 cup Chopped Peppers & onions each
  • 16 oz Spaghetti Sauce



Directions

1) Brown hamberg add onions.

2) Add 1/2 of the hamberg mixture into a large bowl, add all cheeses and peppers mix well.

3) Add in remaining hamberg and the rest of the cooked noodles, add in spaghetti sauce until well blended.

4) Bake in 2-3 quart covered casserole dish for 1 hour.

Serve with italian bread
FYI – slice bread, spread garlic and butter, put slices under broiler until browned, add provolone cheese to the top of each piece of bread broil until softend………

Corn Bread Taco Bake

Ingredients

  • 1-1/2 pounds ground beef
  • 1 (1-1/8-ounce) package taco seasoning mix
  • 1/2 cup water
  • 1 (12-ounce) can whole kernel corn, drained
  • 1/2 cup chopped green pepper
  • 1 (8-ounce) can tomato sauce
  • 1 (8-1/2-ounce) package Jiffy Corn Muffin mix
  • 1 (2-1/8-ounce) can Durkee French Fried Onions
  • 1/3 cup (1 ounce) shredded Cheddar cheese



Directions

* In skillet, brown meat; drain. Stir in taco seasoning, water, corn, green pepper and tomato sauce. Pour into 2-quart casserole.

* In separate bowl, prepare corn muffin mix according to package directions, adding 1/2 can Durkee French Fried Onions. Spoon corn muffin mixture around outer edge of casserole.

* Bake, uncovered, at 400 degrees for 20 minutes. Top corn bread with cheese and remaining onions; bake 2 to 3 minutes longer.

Note: This recipe can be doubled and baked in a 9-inch by 13-inch pan (12 servings).

Makes 6 servings.
