Ingredients
- 2 cups chunky tomato sauce
- 2 (14-ounce) cans black beans, rinsed and drained
- 5 (8-inch) flour tortillas
- 2 cups Mexican blend shredded cheese
- 1/4 cup diced green onions
Directions
Preheat oven to 350 degrees. In an 8-by-8-inch baking dish, cover the bottom with 1/2 cup tomato sauce. Mix remaining sauce and black beans together. Place one tortilla in the dish (you might need to fold the edges around the dish). Place 1/4 of the bean mixture on top of the tortilla. Sprinkle with cheese. Repeat layers, ending with a tortilla and the remaining cheese on top. Cover and bake for 20 to 25 minutes. Sprinkle diced green onions on top and serve.
Top with chopped scallions, tomatoes, guacamole or sour cream.

Ingredients
- 5 cups corn flakes
- 5 tablespoons cocoa powder
- 1 cup peanut butter
- 1/2 cup corn syrup
- 1/2 cup sugar
Directions
* Heat sugar, syrup and cocoa powder just to boiling. Remove from heat, stir in peanut butter, pour over corn flakes, stir and pour into pan to cool.
Makes a 9-inch by 13-inch pan full of servings.

Ingredients
- 1 cup butter or margarine
- 3 cups brown sugar
- 3 cups flour
- 3 cups oatmeal
- 4 eggs
- 1 1/2 t vanilla
- 1 t salt
- 1 t baking soda

- Fill with icing:
- 3 egg whites, beaten
- 2 t. vanilla
- 4 T milk
- 4 cups powdered sugar
- 1 1/2 cups shortening
- 5 T flour
Directions
Cream butter and sugar. Add eggs and vanilla. Sift flour and soda add to mixture. Add salt and oatmeal. Roll into balls and flatten on sheet. Bake at 350 until done. (You will just have to watch, as no time is given. I baked until no longer shiny, but not brown.)
Fill with Icing
3 egg whites, beaten
2 t. vanilla
4 T milk
4 cups powdered sugar
1 1/2 cups shortening
5 T flour

Ingredients
- 3/4 teaspoon salt
- 2 teaspoons vanilla
- 1 teaspoon cream of tartar
- 1 teaspoon soda
- 4 cups flour
- 2 eggs
- 1 cup vegetable oil
- 1 cup shortening (crisco)
- 1 cup powdered sugar
- 1 cup sugar
Directions
In a large bowl, cream crisco, oil and vanilla, mix well. Add eggs adn both sugars mix well. Add soda and salt and gradually flour, beat well. Roll in balls and roll the balls in granulated sugar, place balls on cookies sheet and flatten slightly with a glass bottom dipped in sugar. Bake at 350 for 8-10 minutes or until lightly browned.

Ingredients
- 2 cups of flour
- 1/2 cup of brown sugar
- 1 teaspoon of baking soda
- 1 egg
- 1/4 teaspoon of salt
- 1 cup applesauce
- 1 tsp cinnamon
- 1 cup oatmeal
- 1/2 tsp nutmeg
- 1/2 cup of raisins (optional)
- 1/2 cup of butter
- 1/2 cup of nuts (optional)
- 1/2 cup of sugar
- 1/2 cup of chocolate chips
Directions
Sift together flour, soda, salt, cinnamon, and nutmeg. Set aside. In another bowl, mix butter, sugar, and eggs. Add applesauce (we make our own) and dry ingredients. Mix in the sifted ingredients and mix real well, until batter is smooth. Drop by teaspoon onto a cookie sheet. Bake at 375 degrees for 10 minutes
