Potato Chip Cookies

Ingredients

  • 1 cup shortening
  • 1 cup brown sugar
  • 1 cup white sugar
  • 2 eggs
  • 1 tsp vanilla
  • 2 cups flour
  • 1/2 tsp salt
  • 1 tsp baking soda
  • 2 cups potato chips. slightly crushed
  • 1 cup nuts, if desired



Directions

Cream shortening, brown and white sugars, eggs and vanilla. Add flour, salt, baking soda and stir until well mixed. Add chips and nuts. Drop onto ungreased cookie sheet and bake 12 minutes at 350(F)

Quick choclate chip cookies

Ingredients

  • 1 box cake mix (your choice of French vanilla, white or chocolate)
  • 2 eggs
  • 1/3 cup oil
  • 2 tbls. water
  • 1 bag milk-chocolate chip morsels
  • 1/2 cup chopped pecans or other nuts (optional)



Directions

Mix together all ingredients and drop on cookie sheet by rounded spoonfuls. Bake at 350 for 10 minutes.
Makes 3 dozen.

Rhubarb Dream Bars

Ingredients

  • 1-1/2 cups flour
  • 2/3 cup powdered sugar
  • 3/4 cup margarine
  • Filling:
  • 4 eggs
  • 2 cups sugar
  • 1/2 cup flour
  • 1/2 teaspoon salt
  • 3 cups rhubarb, chopped into small pieces



Directions

* Heat oven to 350 degrees. Mix the first three ingredients like a pie crust. Press into a 9-inch by 13-inch cake pan. Bake 15 minutes.

* For the filling: Mix eggs, sugar, flour, salt, and rhubarb. Pour onto crust. Bake for 35 minutes. Cool and then cut into bars.

Makes 16 bars.

Russian Tea Cakes (aka Mexican Wedding Cakes)

Ingredients

  • 1 C. soft butter
  • 1/2 C sifted powdered sugar
  • 1 tsp vanilla
  • 2 1/4 C sifted flour
  • 1/4 tsp salt
  • 3/4 C. finely chopped nuts

Directions

Mix all ingredients together then add the nuts. Chill dough. Roll into 1 inch balls. Place on ungreased cookie sheet. Bake (400 F)until set but not brown, about 10-12 minutes. While still warm, roll in powder sugar. Cool and roll again.

Sarahs Chocolate Chocolate Chip Cookies:)

Ingredients

  • 2-1/4 cups flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 cup butter, softened
  • 3/4 cup sugar
  • 3/4 cup firmly packed brown sugar
  • 1 teaspoon vanilla extract
  • 2 eggs
  • 2 cups semi-sweet chocolate chips
  • 1/3 cup cocoa powder



Directions

Mix flour, salt, cocoa powder and baking soda in a small bowl.

In a large bowl, cream soft butter, brown sugar and white sugar together. Next add vanilla extract and your eggs. Mix well. Begin adding the flour mix (in small bowl) slowly blending completely. Drop by rounded teaspoons onto a very lightly greased cookie sheet. Bake at 375(F) for 8-10 minutes.

*Sarah made these today for her little friend Noah. They are delicious with a glass of coooold milk:)
