Seven Layer Cookies

Ingredients

  • 1 Stick butter
  • 1 Cup graham cracker crumbs
  • 1 Cup coconut
  • 1 Small package butterscotch chips
  • 1 Small package chocolate chips
  • 1 Can sweetened condensed milk
  • 1-1/2 Cup chopped nuts



Directions

In 9X13 pan, put the graham cracker crumbs. Melt butter and pour over graham cracker crumbs. Then sprinkle over this the coconut, butterscotch chips and chocolate chips. Dribble over the condensed milk. Sprinkle with nuts over
the top and nake for 30 minutes at 350 degrees.

Shortbread-Pecan Fingers

Ingredients

  • 1/2 cup butter or margarine, softened
  • 2 tablespoons powdered sugar
  • 1 cup self-rising flour
  • 1 teaspoon vanilla extract
  • 1 cup finely chopped pecans
  • Sifted powdered sugar



Directions

Cream butter; add 2 tablespoons powdered sugar, and beat at medium speed with electric mixer until light and fluffy. Add flour and vanilla, mix well.

Fold in pecans.

Shape dough into 1 1/2- by 1/2-inch fingers; place on ungreased cookie sheets. Bake at 300 degrees for 30 minutes or until lightly browned.

Remove to wire racks and let cool

10 minutes. Roll in additional powdered sugar.

Place on wire racks to cool completely.

Sour Cream Cookies

Ingredients

  • 2 cups white sugar
  • 1/2 cup butter
  • 1/2 cup shortening
  • 2 eggs
  • 1 cup sour cream
  • 1-1/2 teaspoons vanilla
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/4 teaspoon nutmeg
  • 4 cups flour (approximate)



Directions

* Cream sugar, butter and shortening until fluffy. Add eggs, sour cream and vanilla, beating well. Sift dry ingredients and stir into mixture until blended.

* Drop by tablespoonful onto a greased cookie sheet. Bake at 375 degrees for 10 to 12 minutes.

Makes 6 dozen.

Texas Pecan Sandies

Ingredients

  • 2 sticks butter,softened
  • 4 cups all-purpose flour
  • 2/3 cup oil
  • 1 cup finely chopped pecans
  • 1 cup granulated sugar
  • 1 cup powdered sugar
  • 2 eggs
  • 1 tsp.soda
  • 1 tsp.cream of tarter
  • 1 tsp.vanilla



Directions

Sift together flour,soda and cream of tarter,set aside.
With mixer,cream butter,oil and sugars until fluffy.
Add eggs and vanilla,mixing in well.Stir in flour
mixture and nuts.
Roll in balls.Place on greased cookie sheets.
Rub butter on bottom of a drinking glass,
dip glass in sugar and flatten balls slightly.
Bake at 350 degrees for 8-10 minutes or until very lightly browned.
Do Not Over Bake. Yield:about 4 1/2 dozen.

Toffee Cookies

Ingredients

  • 1 cup soft butter
  • 2 cups brown sugar
  • 2 eggs
  • 3-1/2 cups sifted flour
  • 1/2 teaspoon salt
  • 1 teaspoon baking soda
  • 1 cup finely chopped nuts



Directions

* Heat oven to 400 degrees. Mix well butter, sugar and eggs. Sift together flour, salt, soda. Stir in. Add nuts. Shape in 2 rolls, 2 inches in diameter. Chill. Slice dough 1/8-inch thick.

* Bake for 8 to 10 minutes on ungreased cookie sheet.

Makes about 3 dozen cookies.
