Christmas Sugar Crinkles

Ingredients

  • 1 cup shortening
  • 1 1/2 cups sugar
  • 2 large eggs
  • 1 teaspoon lemon extract
  • 1 teaspoon vanilla extract
  • 2 1/2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/4 cup sugar



Directions

Beat shortening and 1 1/2 cups sugar at a medium speed of an electric mixer until fluffy. Add eggs and flavorings, beating until blended.
Combine flour, baking powder, and salt; gradually add to shortening mixture, beating well. Cover and chill dough.
Shape dough into 1 inch balls. Roll balls in 1/4 cup sugar. Place balls on ungreased cookie sheets.
Bake at 350º for 8 to 9 minutes or until barely golden. Let cool 2 minutes on cookie sheet. Remove to wire racks to cool completely.

Yield: about 5 1/2 dozen.

Cinnamon-Sugar Crisps

Ingredients

  • 3/4 cup butter, softened
  • 1/3 cup sugar
  • 1/3 cup packed brown sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1-3/4 cups all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 2 tablespoons colored sprinkles



Directions

In a mixing bowl, cream butter and sugars. Beat in egg and vanilla. Combine the flour, cinnamon and salt; gradually add to creamed mixture. Shape into a 12-in. roll; wrap in plastic wrap. Refrigerate for 2 hours or until firm.

Unwrap and cut into 1/4-in. slices. Place 2 in. apart on ungreased baking sheets. Decorate with sprinkles. Bake at 350° for 10-12 minutes or until lightly browned. Remove to wire racks to cool. Yield: 3-1/2 dozen.

Cream Cheese Cookies

Ingredients

  • 1/4 cup oleo
  • 8 oz. cream cheese
  • 1 egg yolk
  • 1/4 tsp. almond flavoring
  • 1 package 18.5 oz. cake mix



Directions

Cream oleo and cheese. Blend in egg yolk and flavoring.

Add cake mix, a third at a time, mixing well after each third.

Cover and chill 30 minutes.

Drop by level teaspoon on ungreased baking sheet

Bake 8-10 minutes at 375 till light brown.
Cool slightly.

Yield: 6-8 doz.

May use other flavor cake mixes and complimentary flavoring.

Crispy Oat Drops

Ingredients

  • 1 Cup softened butter or oleo
  • 1/2 cup granulated sugar
  • 1/2 cup firmly packed brown sugar
  • 1 large egg
  • 2 cups all purpose flour
  • 1/2 cup quick cooking oats, uncooked
  • 1 tsp. cream of tartar
  • 1/2 tsp. baking soda
  • 1/4 tsp. salt
  • 1-12 ounce. package M&Ms chocolate mini baking bits
  • 1 cup toasted rice cereal
  • 1/2 cup shredded coconut
  • 1/2 cup coarsely chopped pecans



Directions

Preheat oven 350. Cream butter and sugars until light and fluffy. Beat in egg. In another bowl combine flour, oats, cream of tartar, baking soda and salt. Blend into creamed mixture. Stir in baking bits, cereal, coconut and pecans. Drop by heaping teaspoonfuls about 2 inches apart on ungreased cookie sheets. Bake 10-13 minutes or until lightly browned. Cool and store in container.

Doctors Office Bars

Ingredients

  • 2 (18 to 20 oz.) rolls of chocolate chip cookie dough
  • 2 (8 oz.) pkgs. cream cheese
  • 1/2 cup sugar
  • 2-1/2 teaspoons vanilla
  • 2 eggs



Directions

Press 1 roll of cookie dough in the bottom of a 9×13 inch pan. Mix the cream
cheese, sugar, vanilla and eggs well. Pour over dough. Slice the second roll
of dough and place slices on top of the cream cheese mixture. Bake at 350
degrees for 30 to 35 minutes. Cut into squares.

Baked these squares for a cookout last summer. They were so good! My daughter baked these bars for a coffee break at work. Enjoy!
