Ingredients
- 1 large egg
- 1-1/2 cups cool whip,thawed
- 1 lemon cake mix-dry
Directions
Whisk egg and cool whip until well blended.
Stir in dry cake mix by hand.Shape into balls;roll in powdered sugar.
Bake on lightly greased cookie sheet at 350 degrees for 7 minutes or until done.
Remove from cookie sheet and let cool.

Ingredients
- 1 cup butter
- 1 cup sugar
- 2 eggs
- 14 oz can sweetened condensed milk
- 1/4 cup lemon juice
- 2 tbsp grated lemon rind
- 2 tsp vanilla
- 5 cups all purpose flour
- 4 tsp baking powder
- 1 tsp salt
- Lemon Drizzle
- 1 1/2 cups confectioners sugar. sifted
- 2 tbsp water
- 1 tbsp lemon
Directions
In a large bowl, cream butter and sugar. Add eggs, sweetened condensed milk, lemon juice, lemon rind, and vanilla. Mix until smooth.
In another bowl, combine flour, baking powder, and salt. Add to creamed mixture gradually, mixing after each addition. Divide dough into 3 balls. You can wrap dough into a log, refrigerate and slice off when ready to bake. Wrap in plastic wrap and refrigerate at least 4 hours.
Rool out on lightly floured surface and cut into desired shapes. Bake at 350 degrees for 10 to 12 minutes or until lightly golden brown.
Lemon Drizzle
1 1/2 cups confectioners sugar. sifted
2 tbsp water
1 tbsp lemon
Mix well. Drizzle over cooled cookies.

Ingredients
- 2 t. butter flavoring
- 1/2 c. cornstarch
- 1 c. powdered sugar
- 3 c. flour
- 1 lb. butter (I use half butter and half margarine), softened
Directions
Cream butter; add sugar gradually and beat until fluffy. Sift flour and cornstarch together then add gradually to creamed mixture. Drop by rounded teaspoonful on cookie sheet. Bake at 325º until edges are lightly browned, about 15-20 mins.
These are delicate cookies and will not mail well.

Ingredients
- 1 cup butter, softened
- 1 1/2 cups plus 2 tbls. sugar, divided
- 2 eggs
- 2 3/4 cups all-purpose flour
- 2 tsps. cream of tartar
- 1 tsp. baking soda
- 1/4 tsp. salt
- 2 tsps. cinnamon
Directions
1. Combine butter, 11/2 cups sugar and eggs thoroughly.
2. Sift together flour, cream of tartar, baking soda and salt. Blend into butter mixture.
3. Form into balls the size of walnuts. Roll in mixture of 2 tablespoons of sugar and cinnamon.
4. Place about 2 inches apart on ungreased cookie sheets. Bake in a preheated 400-degree oven for 9-12 minutes.

Ingredients
- 3/4 cup shortening
- 1 cup packed borwn sugar
- 1/4 cup molasses
- 2 eggs
- 2 1/4 cups all purpose flour
- 1 tsp baking soda
- 1 tsp ground ginger
- 1 tsp ground cinnamon
- 1/2 tsp salt
- 1/2 tsp ground cloves
- 1/2 cups raisins
- 1/2 cup chopped walnuts
Directions
In a large mixing bowl, cream shortening and brown sugar. Beat in molasses. Add eggs, one at a time, beating well after each addition. Combine the flour baking soda, ginger, cinnamon, salt and cloves; gradually add to creamed mixture. Stir in raisins and nuts. Drop by rounded tablespoonfuls 2 inches apart onto greased baking sheets. Bake at 375 F. for 8 – 10 minutes or until edges are lightly browned. Remove to wire racks to cool.
Makes about 3 1/2 doz.
