Gingerbread Cocoa Mix

Ingredients

  • 1 tablespoon ground ginger
  • 2 cups French vanilla flavored non-dairy powdered coffee creamer
  • 3 cups hazelnut flavored non-dairy powdered coffee creamer
  • 3 cups sweetened chocolate drink mix powder
  • 1/2 cup chopped crystallized ginger
  • 1 cup sugar
  • 1 tablespoon ground cinnamon
  • 1 teaspoon salt



Directions

Makes about 9 cups.

In workbowl of food processor fitted with the chopping blade, combine sugar and crystallized ginger. Process until ginger is VERY finely minced.

Add remaining ingredients and blend well. (Process in half-batches, if necessary.)

Store in airtight container.

To serve: Place 1/4 cup cocoa mix in mug. Add 1 cup boiling water. Stir to dissolve.

Gleasons Irish Cream

Ingredients

  • 1 can sweetened condensed milk
  • 1 pint whipping cream
  • 2 TBSP chocolate syrup
  • 3 eggs
  • 1 cup-ish Bushnell irish Whiskey



Directions

Put it all in a blender and mix well :)

Hot Buttered Rum Batter (for drinks)

Ingredients

  • 1/4 pound butter
  • 1 pound dark brown sugar
  • 1/4 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/4 tsp ground cloves
  • dark rum



Directions

For batter:

Cream butter and sugar. Sprinkle spices and mix thoroughly. Store in refrigerator in a covered container.

To make the drink:

Place 1 heaping Tbl of batter in a mug. Add 1 1/2 ounces dark rum. Fill with boiling water. Stir and serve.

Hot Raspberry Cider

Ingredients

  • 8 cups fresh apple cider
  • 1 cup frozen raspberry juice concentrate, thawed
  • 1/4 cup sugar
  • 1 cinnamon stick



Directions

Directions:
Combine cider, juice, sugar and cinnamon stick in a 4-quart saucepan. Heat over medium heat, stirring occasionally, until mixture simmers. Reduce heat and simmer 10 minutes. Remove from heat. Remove stick, and serve hot. Transfer to a crockpot and keep setting on low to serve throughout your brunch. Makes 8 cups.

Hot Spiced Cider

Ingredients

  • 6 cups fresh apple cider
  • 1/4 cup pure maple syrup (more or less, to taste)
  • 2 cinnamon sticks
  • 6 whole cloves
  • 6 whole allspice berries
  • 6 strips orange peel
  • 6 strips lemon peel



Directions

Pour the apple cider and maple syrup into a large stainless steel saucepan. Place the cinnamon sticks, cloves, allspice berries, orange peel and lemon peel in the center of a washed square of cheesecloth; fold up the sides of the cheesecloth to enclose the bundle, then tie it up with a length of kitchen string. Drop the spice bundle into the cider mixture.

Place the saucepan over moderate heat for 5 to 10 minutes, or until the cider is very hot but not boiling.

Remove the cider from the heat. Discard the spice bundle. Ladle the cider into big cups or mugs, adding a fresh cinnamon stick to each serving, if you like.
