Curried Chicken Skillet Dinner

Ingredients

  • 2 teaspoons brown sugar
  • 2 teaspoons curry powder
  • 1/2 teaspoon dry mustard
  • 1/4 teaspoon pepper
  • 4 boneless chicken breast halves, cut in bite-size pieces
  • 14.5 ounces chicken broth or about 1 3/4 cups
  • 1 1/2 cups orange juice
  • 1 1/4 cups Long grained rice, uncooked
  • 10 ounces Pkg frozen English Peas



Directions

Combine first 5 ingredients; sprinkle 1 tbsp seasoning mixture over chicken, tossing to coat. Reserve remaining seasoning mixture. Bring chicken broth, orange juice, rice and reserved seasoning mixture to a boil in a large non stick skillet. Add chicken; reduce heat, cover and simmer 15 minutes. Stir in peas; cover and simmer 10 minutes or until liquid is absorbed.

Yield: 4 servings

Banana in a Blanket

Ingredients

  • 1 flour tortilla
  • Peanut butter
  • Mini M&M’s
  • Banana



Directions

Heat tortilla in microwave on a paper towel for about 15 seconds. Spread tortilla with peanut butter. Sprinkle M&M’s® on peanut butter. Lay peeled banana on the edge of tortilla. Roll tortilla around banana.

Brown Bag Carmel Corn

Ingredients

  • 3 qt popped corn
  • 1 cup brown sugar
  • 1 stick margarine
  • 1/4 cup white corn syrup
  • 1/2 tsp salt
  • 1/2 tsp baking soda
  • peanuts (optional)



Directions

Place popcorn and peanutes in large brown bag; set aside.

Microwave sugar, margarine, corn syrup and salt for 3 minutes (stir 3 times).

Mixture should be boiling

Cook additional 2 minutes.

Remove and add soda; stir. The mixture will be foamy.

Pour over popped corn.

Fold top of bag; shake well

Microwave the bag of popcorn for 1 1/2 minutes.

Remove, shake and microwave an additional 1 1/2 minutes.

Pour contents onto cookie sheet and separate with a fork.

Store in a plastic bag.

Kid Turtles

Ingredients

  • 1 bag miniature pretzels
  • 1 bag Rolo candies
  • Pecan halves



Directions

* Heat oven to 350 degrees. Place parchment paper on a cookie sheet. Lay out mini-pretzels and place a Rolo on top.

* Put in oven for 2 to 3 minutes for candy to soften. Remove cookie sheet from oven and press pecan half into candy. Let cool.

Makes as many as you desire.

Super Nachos

Ingredients

  • 1/4 cup fat-free refried beans
  • 1/2 cup (2 ounces) shredded reduced-fat Cheddar cheese
  • 12 large baked low-fat tortilla chips (about 1-1/2 ounces)
  • 2 tablespoons chunky salsa



Directions

1. Arrange chips in single layer on large microwavable plate. Sprinkle cheese evenly over chips.

2. Spoon 1 teaspoon beans over each chip; top with 1/2 teaspoon salsa.

3. Microwave on MEDIUM (50 percent) 1-1/2 minutes; rotate dish. Microwave 1 to 1-1/2 minutes more or until cheese is melted.

Conventional Directions Preheat oven to 350°F. Substitute foil-covered baking sheet for microwavable plate. Assemble nachos on prepared baking sheet as directed above. Bake 10 to 12 minutes or until cheese is melted.

Tip: For a single serving of nachos, arrange 6 large tortilla chips on microwavable plate; top each chip with 2 teaspoons cheese, 1 teaspoon refried beans and 1/2 teaspoon salsa. Microwave on MEDIUM (50 percent) 1 minute; rotate dish. Microwave 30 seconds to 1 minute or until cheese is melted.
