Hamburger and Macaroni

Ingredients

  • 1 1b ground beef
  • 1 yellow onion, chopped
  • 1 Tbsp olive oil
  • 1/2 teaspoon seasoned salt
  • dash crushed red pepper
  • 1/2 teaspoon celery seed
  • 1 large can (28 oz) of diced tomatoes
  • 2 Tbsp Worcestershire sauce
  • 1/4 cup chopped parsley
  • 2 cups uncooked macaroni



Directions

Get a large pot of hot water heating and begin cooking the macaroni as per the directions on the macaroni package.

In a large skillet, brown the ground beef in olive oil on hi heat. Add chopped onion, saute with the beef. Once the beef and onions are browned, lower the heat to medium. Add a dash of crushed red pepper. Add Vegesal or other seasoned salt. Add celery seed. Add canned tomatoes. Add Worcestershire sauce. Let simmer for 5 minutes. Add the drained and cooked macaroni and parsley. Simmer for another 5 minutes.

Serves 4.

Preparation time: 20 minutes.

Creamed Chicken on Biscuits

Ingredients

  • 1/4 cup – 1/2 cup leftover milk gravy
  • 1 can cream of chicken soup
  • milk (just a little)
  • left over chicken, chopped
  • buttered biscuits (bisquick or regular)



Directions

This is a great way to use up leftover chicken and milk gravy! I found this recipe/idea at Taste of Home. I WILL be trying it next time we have roast chicken! Mmmmm

Mix leftover milk gravy and can of cream of chicken soup. Add a little milk and leftover chicken. Warm together and serve over buttered biscuits:)

Fruited Chicken Salad

Ingredients

  • 4 cups diced, cooked chicken (3 1/2 pounds)
  • 1 (15oz) can drained pineapple chunks
  • 1 cup chopped celery
  • 1 (11oz) can drained mandarin oranges
  • 1/2 cup sliced pitted ripe olives
  • 1/2 cup chopped green pepper
  • 2 T. grated onion
  • 1 cup mayo or salad dressing
  • 1 T. prepared mustard
  • 1 (5oz) can chow mein noodles
  • lettuce leaves, optional



Directions

In large bowl, combine cooked chicken, pineapple, celery, oranges, olives, green pepper and onion. Combine mayo or salad dressing and mustard. Toss gently with chicken mixture. Cover and chill several hours or overnight. Just before serving, mix in chow mein noodles, turn into lettuce lined bowl.

Messy Toms

Ingredients

  • 1/4 cup maple syrup
  • 1 cup barbecue sauce
  • 1/4 cup pepper jelly (this may be scaled back to 2 tbls. if your family doesn
  • 1 cup ketchup
  • 3-4 cups chopped, cooked turkey
  • 6 toasted, whole-wheat hamburger buns



Directions

1. In a large skillet, place chopped turkey.

2. In a medium mixing bowl, combine ketchup, barbecue sauce, pepper jelly and syrup.

3. Pour mixture over turkey and heat through.

4. Divide the filling evenly among buns and serve.

Serves 6.

Turkey Stock

Ingredients

  • 6 individual bay leaves
  • 1 bunch Italian flat leaf parsley
  • 5 whole carrots, cut into 4-inch chunks
  • 5 ribs of celery, cut in fourths
  • 3 yellow onions with skins, quartered with skin on
  • Whole turkey neck and giblets
  • Water
  • 2 tablespoons of salt or to taste



Directions

Place onions, celery, carrots, parsley, bay leaves, turkey neck and giblets and salt in a stock pot and cover with water (at least one gallon)

Heat at a low simmer for 90 minutes to two hours.

Strain the stock in a colander and retain the cooked neck and giblets; set stock aside

Remove skin from neck; mince giblets and neck meat and set aside for gravy.

Use stock to moisten stuffing and as base for gravy.
