Five Spice Glaze

Ingredients

  • 1/4 cup frozen orange juice concentrate, thawed
  • 2 tbsp honey
  • 1 tbsp soy sauce
  • 1/4 tsp five spice powder
  • Dash ground ginger



Directions

In a small bowl combine all the ingredients. Brush evenly onto meat or fish, during last 5 mins of grilling. Brush the remaining glaze on meat or fish before serving. Make enough for 1 lb of meat or fish. Suggested for pork, chicken or fish.

Garlic Butter

Ingredients

  • 1 cup butter, softened
  • 1 tablespoon minced garlic
  • 1/4 cup grated Parmesan cheese
  • 1 tablespoon garlic salt
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon ground black pepper
  • 1/4 teaspoon ground paprika



Directions

In a small bowl, combine softened butter, minced garlic and parmesan cheese. Season with garlic salt, Italian seasoning, pepper and paprika. Mix until smooth.

Simple recipe makes great garlic bread. Leftovers go great on bar-b-que steaks, pasta, rice or potatoes. You can use any butter or margarine you like. Also, fresh or minced garlic in a jar works well. Adjust the amount of garlic to your taste.

Garlic Croutons

Ingredients

  • 4 garlic cloves
  • 1/4 cup olive oil
  • 2 heaping cups 3/4-inch bread cubes, cut from a good quality baguette or Italian loaf
  • Large pinch salt



Directions

Heat a large skillet over low heat. With motor running, drop garlic cloves through feeder tube of a food processor to mince. (A blender works as well.) Scrape down sides of bowl and add oil through feeder tube. Continue to process so that garlic releases its flavor into oil, about 30 seconds.

Strain garlic from oil through a fine-mesh strainer; reserve half of garlic for dressing and set aside remaining half for another use. You should have about 3 tablespoons garlic oil.

Raise heat under skillet to medium. Place bread cubes in a medium bowl. Drizzle 2 tablespoons garlic oil evenly over bread, along with a big pinch of salt; toss to coat. Add remaining 1 tablespoon oil; toss again.

Add bread cubes to hot skillet and toast, turning cubes and shaking pan often, until crisp and golden brown, 5 to 7 minutes. Return croutons to bowl and set aside to cool while preparing salad.

Herb Butter

Ingredients

  • 8 T. (1 stick), unsalted butter, softened
  • 2 t. chopped fresh cilantro
  • 2 t. chopped fresh dill
  • 1/2 t. salt



Directions

In a small bowl, mash together ingredients until smooth. Using plastic wrap, roll into a log, wrap it, and chill until firm.

Homemade Sour Cream

Ingredients

  • 2 cups light cream
  • 2 T buttermilk



Directions

Mix ingredients in clean glass with tight fitting lid.
Shake well. Leave to stand for 24-48 hours. Will last in the fridge for up to 2 1/2 – 3 wks.
