Ingredients
- 1 pkg. frozen breaded chicken patties
- 4 onion rolls, split
- 1/4 cup mayonnaise dijon spread
- 4 slices Monterey jack cheese
- 1 avocado, peeled and sliced
Directions
Bake chicken patties according to package directions. Meanwhile, toast onion rolls in toaster oven.
When chicken patties are done and rolls are toasted, assemble sandwiches using 1 tablespoon dijon spread, 1 slice cheese, and 2 avocado slices per sandwich.
Makes 4 sandwiches
I always order us the Market Day chicken patties and this is a nice change to just the ordinary chicken patty sandwich:)

Ingredients
- 3c cooked potatoes
- 1c milk
- 1c cheese, cut into chunks
- Onion salt, salt, pepper
Directions
Put all ingredients in pan and boil til cheese is melted and juice becomes gravy-like. Small potatoes with peelings on can be used and can be cooked ahead of time and kept in fridge til used.

Ingredients
- 4gal sliced potatoes
- 1qt sour cream OR 1lb butter
- 6c chopped ham
- 3c chopped celery
- 1c cornstarch
- 2gal sweet milk
- 1c chopped onion
- 1 mango (if desired)
Directions
Use large electric roaster. Put in layer of potatoes, ham, celery, onion, mango (if used) and butter (if used). Add salt and pepper to each layer as needed. Make batter with cornstarch, milk, and sour cream (if used) and pour over potatoes. Bake at 350º 3 hrs. Enough for 100 people.

Ingredients
- 20 lbs. red potatoes
- 8 lbs. fully cooked ham, cubed
- 4 cans (10-3/4 oz.) cream of celery soup
- 2 quarts milk
- 1/2 cup flour
- 6 lbs. Velveeta, cubed
- 2 teaspoons pepper
- 2 teaspoons paprika
Directions
Cook washed potatoes in their jackets until tender. Cool. Peel and cut potatoes into cubes (not sliced). Place about 6 cups potatoes each into
greased 9×13″ pans. Or place all potatoes into a large electric roaster. Add 3-1/2 cups ham to each pan or entire amount to roaster. In a large dutch oven, over medium heat, combine soup, milk, and flour until smooth. Bring to a boil. Cook and stir 2 minutes. Add cheese, pepper, and paprika. Reduce heat and stir until cheese is melted. Pour 2-1/4 cups into each pan or entire amount into the roaster.
Cover and bake pans for 40 minutes at 350 degrees. Uncover and bake 5-10 minutes more. For roaster heat through, approximately 3 hours at a medium-low heat stirring occasionally.
Serves approximately 100 – 3/4-cup servings. NOTE: Do not add any salt during the entire cooking process.

Ingredients
- 1 bag frozen plain French fries or steak fries
- Plain flour
- Batter:
- 1 cup pancake mix
- 2 cups club soda
- Seasoning:
- 1/2 teaspoon black pepper
- 1/2 teaspoon ground ginger
- 1/4 teaspoon dry mustard
- 2 tablespoons seasoned salt
Directions
Prepare batter.
Combine seasoning mixture and store in a tightly covered container.
Allow 1 teaspoon seasoning or to taste for each cup of prepared batter.
Without thawing, open bag of fries and dust them lightly but evenly in
flour, letting them dry on waxed paper lined cookie sheet for a few
minutes.
Coat the floured fries evenly in the batter and fry in small portions at a time in 385°F oil at least 2 inches deep in pan.
Turn fries once to brown evenly. Remove with tongs to drain on paper
towel lined plate. Serve at once.
The batter can be repeated as needed to coat the frozen fries
