Ingredients
- 1 (2-lb.) bag of frozen French-fried potatoes
- 1/3 cup melted butter
- 4 tbls. of packaged taco seasoning mix
- 1/4 to 1/2 tsp. black pepper
Directions
1. Combine potatoes and butter in bowl, toss until coated. Sprinkle seasonings over potatoes and coat well.
2. Arrange in a single layer on a baking sheet. Bake at 400 degrees for 15-20 minutes.

Ingredients
- 1 pound (3 medium) potatoes, cut into 1/2-inch chunks
- 1 cup bite-size broccoli florets
- 1 cup 1-inch red and/or green bell pepper squares
- 1 cup very thinly sliced carrots
- 2 tablespoons water
- 1-1/2 tablespoons canola oil
- Salt and pepper, to taste
- 3/4 cup (about 3 ounces) shredded reduced-fat Cheddar cheese
- 1/4 cup reduced-fat sour cream
Directions
* Combine vegetables in an even layer in shallow, 2-quart microwave-safe dish; add water. Cover, venting one corner. Microwave on high about 10 minutes (see note), tossing once after 5 minutes, until potatoes are tender; drain.
* Heat oil in 10-inch nonstick skillet over medium-high heat. Add vegetables, season with salt and pepper, and saute about 10 minutes, tossing often, until vegetables begin to brown. Spoon onto serving plates, sprinkle with cheese, and dollop with sour cream, dividing equally.
Note: Times are approximate. Adjust times to your own microwave oven.
Makes 4 main-dish or 6 side-dish servings (about 4 cups).

Ingredients
- 2 2/3 cup chicken broth
- 2/3 cup milk
- 1/4 cup butter or margarine
- 1/4 tsp pepper
- 2 2/3 cups mashed potato flakes
- 1/3 cup shredded Monterey Jack cheese
- 1/3 cup cubed process American cheese
- 2 tablespoons snipped chives
- 1/4 cup sour cream (optional)
Directions
In a large saucepan, combine the broth, milk, butter and pepper; bring to a boil. Remove from the heat; stir in potato flakes. Let stand 30 seconds; flugh with a fork. Transfer to greased 1 quart baking dish. Top with cheeses.
Bake, uncovered, at 350 degrees for 20 minutes or until cheese is melted. Sprinkle with chives. Serve with sour cream if desired.

Ingredients
- 5-6 Medium red Potatoes
- 1/2 cup butter
- 1/2 cup white onion
- 1 tsp. crushed red pepper
- salt and pepper to taste
Directions
Wash potaotes, slice.
Put in baking pan
Sprinkle potatoes with butter and seasonings.
Bake 350 for 45 min. – 1 hour.
