Ingredients
- 1 cup rice
- 1/2 stick oleo
- 1 can consomme
- 1 can water
- 1 tsp salt
- 2 T. each – celery, onions, parsley, chives
- 1 cup mushrooms
- 1/8 tsp black pepper
- 1/8 tsp red pepper
Directions
Heat oven to 375(F). Melt butter and pour into baking dish. Add rice, stir. Pour in other ingredients. Bake 50 minutes. Turn under and bake 10 minutes longer. No gravy needed.

Ingredients
- 1/2 cup chopped green pepper
- 3/4 cup chopped white onion
- 1/3 cup chopped ham
- 1/2 tsp Spanish saffron
- 1/3 cup butter
- 3 cups cooked rice
- 1/2 tsp white pepper
- 1/3 cup chopped pimento
- 1 tablespoon liquid from pimento
Directions
In a 9 inch skillet over medium heat, saute green pepper, onion, ham and saffron in butter until tender. Stir in rice, pepper, pimento and pimento liquid, continue cooking until heated through.

Ingredients
- 1/4 cup Chopped Onion
- 3 tbs Butter
- 1-1/2 cups Sliced Mushroom
- 2 cups Chopped Broccoli
- 1 cup Diced Tomato
- 1 cup Uncooked Rice
- 2 cups Water
- 2 Cubes Chicken Bouillon
- 1/2 tsp Salt
- 1/2 tsp Oregano
- 1/4 cup Grated Cheese
Directions
Cook onions in butter until golden; add mushrooms, broccoli and tomatoes and cook about 4 minutes. Add water and bouillon cubes and bring to a boil. Stir in rice, salt and oregano. Cover and cook over low heat, 20 minutes or until water is absorbed. Stir in parmesan cheese, serve hot or cold.

Ingredients
- 1/2 pound wild rice cooked according to package directions
- 1/3 cup chopped green onion
- 1/2 cup minced ham
- 1/3 cup butter
- 1/4 cup chopped parsley
- dash of pepper
Directions
While rice is cooking, saute onion and ham in butter until ham is lightly browned. Add drained rice and continue cooking 5 minutes more. Remove skillet from heat. Stir in parsley and pepper. Serve immediately.

Ingredients
- 1 cup uncooked wild rice
- Seasoned salt, optional
- 2 cups cooked chicken
- 1-1/2 cups halved green grapes
- 1 cup sliced water chestnuts, drained
- 3/4 cup lite mayonnaise
- Lettuce leaves
Directions
Cook rice, according to package directions, omitting salt if using seasoned salt. Drain well; cool to room temperature. Spoon into large bowl; add chicken, grapes, water chestnuts and mayonnaise. Toss gently with a fork. Cover and chill.
Serve on lettuce leaves or line a bowl with lettuce and fill with salad.
Yield; 6 servings
