Ingredients
- 1 cucumber (Sliced on the thin side)
- 1/4 cup milk
- 1 tbl salad dressing (Miracle Whip)
- a little salt
- 1 tbl apple cider vinegar
Directions
Slice and peel one cucumber. Slices should be on the thin side. In a small bowl, stir one-fourth cup milk, 1 tablespoon salad dressing (Miracle Whip), a little salt, and 1 tablespoon apple cider vinegar. Stir well and pour over cucumber slices until coated. Toss and serve. Use If you use two cucumbers, double the ingredients used.

Ingredients
- 1 c. shredded coconut
- 1 c. pineapple tidbits or chunks, drained
- 1 c. mandarin orange slices, drained
- 1 c. miniature marshmallows
- 1 c. chopped pecans or walnuts
- 1 c. Cool Whip
Directions
Combine all ingredients. Chill for at least 1 hour before serving.

Ingredients
- 8 oz. Brick or Mozzarella cheese
- 1 can (15 oz) garbanzo beans
- 1 can (15 oz) black beans
- 1 can (15 oz) red kidney beans
- 1 cup cherry tomatoes, halved
- 1 red or yellow bell pepper, chopped
- 1 bunch green onions, sliced
- 1/4 cup chopped cilantro
- 2 cloves garlic, minced
- 3/4 cup Italian dressing
- 1/4 cup fresh lime juice
- 1 tbsp chili powder
Directions
Cut cheese in small chunks. Combine with remaining ingredients in a quart size bowl. Refridgerate 2 hours or more (up to 2 days). Keep chilled until serving time.

Ingredients
- 10 oz. spinach
- 3 scallions
- 1 C. slivered toasted almonds
- 2 Tbs. sugar
- 1 lg. can or two small ones mandarin oranges, drained
- Dressing:
- 1/4 C. oil (NOT olive)
- 2 Tbs. sugar
- 2 Tbs. red wine vinegar
- 1 Tbs. parsley flakes
- 1/2 tsp. salt and pepper to taste
Directions
Put spinach in salad bowl, with or without the stems.
Add chopped scallions
Put almonds on cookie sheet with the first 2 Tbs. sugar sprinkled on top. Put in 350 oven for 10 min. to toast. Let cool when done.
Mix dressing in jar and shake until salt and sugar dissolve.
Add dressing to spinach and scallions and toss.
Add drained oranges and almonds.
Spinach has a tendency to wilt quickly so do not add dressing and oranges until ready to serve. You may also use sliced chicken for a complete meal instead of just a salad.
This is really a great salad and everytime I fix it for church dinners or family there is never any left. And I triple the recipe!!!

Ingredients
- 10 oz. spinach
- 1 qt. strawberries slices
- 1 c. chopped pecans or walnuts – sauteed in a small amount of butter with tbsp. of sugar
- Dressing: mix in blender
- 1/2 c. sugar
- 1/2 c. veg. oil
- 1 tsp worchesire sauce
- 2 tbsp. sesame seeds
- 1 tbsp poppy seeds
- 2 or 3 whole strawberries
Directions
Wash and dry spinach, tear into bite size pieces. Combine spinach, pecans and strawberries in salad bowl, toss gently. Add dressing to salad and toss again.
