Edisto Island Slaw

Ingredients

  • 1 head green cabbage, chopped
  • 1-2 tablespoons dark vinegar
  • 1-1½ cups mayonnaise (he uses Hellmann’s with Extra Virgin Olive Oil)
  • Mrs. Dash original blend seasoning (a blend of onion, black pepper, parsley, basil, orange peel, tomato and other spices), to taste
  • Morton Nature’s Seasons seasoning blend (onion, garlic, salt, pepper and other spices), to taste



Directions

• Chop cabbage, being sure to remove the stem.

• Mix mayonnaise and vinegar together, being careful not to add too much vinegar.

• Add mayonnaise mixture to the slaw, chopping cabbage some more as you mix it.

• Add the two spices to taste. (Graham uses more of the Mrs. Dash than the Morton blend).

• Serve immediately.

Egg and Cucumber Salad

Ingredients

  • 6 hardboiled eggs, chopped
  • 1 cup diced cucumber, peeled, seeded
  • 1 cup diced celery
  • 3 Tbsp chopped green onion
  • 2 Tbsp pimento
  • 1 tsp salt
  • 1/2 cup mayonaise



Directions

Mix all together, being sure to drain diced cucumber well. Makes about 3 cups (300ml)

Field Salad

Ingredients

  • 4 oz mixed salad greens
  • 1/3 cup chopped walnuts, toasted
  • 4 oz Gorgonzola cheese, crumbled
  • 1 tart green apple, cored and thinly sliced
  • 1/4 cup bottle raspberry vinaigrette salad dressing
  • Garnish: Edible Flowers



Directions

In a large bowl, combine salad greens, walnuts, cheese and apple. Toss with raspberry vinaigrette. Garinish with edible flowers. Makes a very pretty salad:)

Five Cup Salad

Ingredients

  • One cup canned mandrain oranges drained
  • One cup canned crushed Pineapple drained
  • One cup miniture marshmellows
  • One cup shredded coconut
  • One cup sour cream



Directions

Place all the ingredients except the sour cream and mix carefully together. Add the sour cream and mix carefully. Put in a glass bowl and chill until ready to eat. Makes a good salad when you have a large meal. Enjoy

Good with Anything Salad

Ingredients

  • For dressing:
  • 1-1/2 cups Hellmann’s mayonnaise
  • 1/2 cup granulated sugar
  • 1/2 cup grated Parmesan cheese
  • For salad:
  • 1 large head of lettuce, chopped
  • 1 large cauliflower, broken into florets
  • 1 large red onion, cut into thin slices
  • 6 slices bacon, cooked crisp and crumbled



Directions

Serves 6 to 8.

Make the dressing the night before and refrigerate then toss with the salad just before serving.

For dressing:

1/2 cup granulated sugar
1/2 cup grated Parmesan cheese

Mix mayonnaise, sugar and Parmesan cheese to make dressing and refrigerate overnight.

For salad:
1 large head of lettuce, chopped
1 large cauliflower, broken into florets
1 large red onion, cut into thin slices
6 slices bacon, cooked crisp and crumbled

Mix above ingredients and toss with the dressing just before serving.
