Tuna Burgers

Ingredients

  • 1 small can white albacore tuna, water packed
  • 1 Tablespoon dried minced onion
  • 2 heaping tablespoons mayonnaise
  • 2 tablespoons grated Parmesan cheese
  • 1/8 teaspoon dried dill
  • 2 tablespoons white wine
  • hamburger buns or English muffins
  • Cheddar cheese



Directions

Slightly toast hamburger buns or English muffins. Combine the ingredients for the burgers and spread mixture on buns or muffins.

Sprinkle with grated Chedder cheese. Broil until cheese bubbles.

Makes 4 to 6 servings.

Tuna Cheese Melt

Ingredients

  • 1/2 cup sour cream
  • 1/2 teaspoon garlic salt
  • 8 slices light rye bread
  • 1 can (6 ounces) tuna, drained
  • 2 tablespoons mayonnaise
  • 4 tablespoons butter, divided
  • 4 slices process American cheese



Directions

Combine sour cream and garlic salt; spread on one side of each slice of bread. In a small bowl, combine tuna and mayonnaise; spread on four slices of bread. Top with cheese and remaining bread; gently press together.

Melt 2 tablespoons butter in a large skillet over medium heat. Add two sandwiches; cook until both sides are golden brown and cheese is melted. Repeat with remaining butter and sandwiches.

Yield: 4 servings.

Tuna Cheese Spread

Ingredients

  • 1 package 8 ounces cream cheese, soft
  • 1 can (6 ounces) tuna, drained and flaked
  • 1/2 cup finely sliced green onions
  • 1/4 cup mayonaise
  • 1 tbl lemon juice
  • 3/4 tsp curry powder
  • Dash of salt
  • bread or crackers



Directions

The tuna flavor in this is very subtle in this thick and creamy spread. Its excellent on crackers, or carrot and celery sticks, stuffed in a tomato or used for sandwiches.

In a bowl, combine the first seven ingreients and mix well. Spread on bread, crackers, veggies or in a tomato.

Turkey Watercress Club Sandwich

Ingredients

  • 1 tablespoon olive oil
  • 2 tablespoons fresh lemon juice
  • 3/4 teaspoon freshly ground black pepper
  • 1 garlic clove, minced
  • 3/4 pound turkey cutlets (each about 1/3 inch thick)
  • 3/4 cup watercress leaves plus about 1 cup tender sprigs
  • 1/3 cup mayonnaise
  • twelve 1/2-inch slices brioche or challah, toasted lightly
  • 12 slices bacon, cooked until crisp
  • 3 small tomatoes, sliced



Directions

In a shallow dish whisk oil and 1 tablespoon of lemon juice with pepper and garlic and add turkey. Marinate turkey, turning once, 30 minutes. Discard marinade. Heat a well-seasoned ridged grill pan over moderately high heat until hot and grill turkey 3 minutes on each side, or until just cooked through. Cool turkey on a cutting board and cut into 4 portions.

In a small food processor or blender puree watercress leaves and mayonnaise until smooth and blend in remaining tablespoon lemon juice and salt and pepper to taste.

Spread watercress mayonnaise on 8 toast slices and top 4 with turkey and salt and pepper to taste. Top turkey with 4 remaining mayonnaise-spread toasts, mayonnaise sides up, and top each portion with bacon, tomatoes, and watercress sprigs. Top with remaining toasts.

Vegetable Sandwiches

Ingredients

  • 1 (8 oz.) cream cheese, softened
  • 1/4 cup finely chopped carrot
  • 1/4 cup finely chopped green pepper
  • 1/4 cup finely chopped red pepper
  • 1/4 cup cucumber, grated and drained
  • 2 tablespoonsfinely chopped green onion
  • 1 tablespoon mayonnaise
  • 1 tsp. lemon juice
  • salt and pepper to taste



Directions

Mix all ingredients together. Spread on spread on bread for sandwiches, and trim off the crust. I cut them in fourths for parties or where there is a lot of other food. These are real tasty and go over well. Enjoy!!!
