Cheddar Spread

Ingredients

  • 8 oz. cream cheese, softened
  • 4 to 5 oz. sharp cheddar cheese, finely grated
  • 2 to 3 Tbs. mayonnaise
  • 2 tsp. Dijon-style mustard
  • 1/3 to 1/2 cup chopped pimiento or red bell pepper, roasted and peeled
  • 1/4 cup finely diced sweet onion
  • 2 tsp. minced fresh thyme or 1 tsp. dried thyme, crumbled, optional
  • 1 to 2 Tbs. chopped fresh parsley, optional



Directions

Soften cream cheese in bowl with fork. Add cheddar, mayonnaise and mustard and blend well.

Add pimiento, onion, thyme and parsley, if desired, and mix thoroughly.

Cover and let mixture stand for at least 30 minutes before serving.

Cheese Steak Wrap

Ingredients

  • 1 lb. round steak, sliced into cubes
  • 1/4 cup Tony Chachere’s gravy mix
  • 1/2 cup water
  • 1 bunch green onions, sliced
  • 2 green bell peppers, sliced
  • 4 to 6 slices Provolone cheese
  • Flour tortilla wraps, any flavor



Directions

1. Place sliced round steak into slow cooker. Mix together gravy mix and water and pour over steak in cooker.
2. Add in green onions and bell peppers. Cook on Low for 6 to 8 hours.
3. Using slotted spoon, spoon meat, onions and peppers into wraps and top each with a slice of cheese before rolling up. Fasten with toothpicks.

Serves 4-6

Cheeseburger Joes

Ingredients

  • 1 ½ pounds lean ground beef
  • 1/3 cup chopped bell pepper
  • 1 small onion, chopped
  • 3-4 cloves garlic, minced
  • 10 ounces processed American cheese,cubed
  • 1 tablespoon milk
  • Black pepper to taste
  • Kaiser rolls



Directions

Cook the ground beef together with the bell pepper, onion and garlic. Season with lots of black pepper. Add the cheese and milk. Cook on low heat until cheese is completely melted, stirring often.

To serve, spoon the cheeseburger mixture onto the Kaiser rolls.

Cheeseburger Sandwiches

Ingredients

  • 1½ pounds lean ground beef
  • ½ teaspoon garlic-pepper blend
  • 1 package pasteurized process cheese spread, (8ounces) diced (aka Velveeta)
  • 2 tablespoons milk
  • 1 green bell pepper, chopped
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 8 sandwich buns



Directions

In a large skillet, brown ground beef and garlic-pepper blend until thoroughly cooked. Drain.

In a 3½ to 4 quart crock pot, combine cooked ground beef and all remaining ingredients except buns; mix well. Cover; cook on low setting for 6 to 7 hours.

To serve: spoon mixture onto sandwich buns.

Chicken Cordon Bleu

Ingredients

  • 6 ounce Chicken breast, boneless and skinless
  • Flour
  • 1 1/2 Tablespoon Oil
  • 2 ounces Ham, sliced
  • 1 1/2 ounces Swiss cheese, sliced
  • 1 Kaiser bun
  • Lettuce



Directions

Heat the oil in a heavy skillet. Dredge the chicken in the
flour. Add to the skillet and cook until tender and lightly
browned. Place on a cookie sheet. Top with the ham and
cheese. Place under the broiler until the cheese has
melted. Place on the bun and garnish with the lettuce.
