Pizza Baguettes

Ingredients

  • a baguette or french bread
  • pasta sauce either from a jar or your own (Crushed tomatoes, puree and garlic)
  • grated cheese
  • Toppings: Sliced mushrooms, peppers, onion, chilli slices, ham, pepperoni etc etc



Directions

You get a baguette or french bread, whichever you wanna call it. Cut it lengthways and
in half so you have pieces around ten inches long. Spread on a pasta sauce either from a jar or your own (Crushed
tomatoes, puree and garlic) cover with a layer of grated cheese, then add your required topping. Suggestions
are… Sliced mushrooms, peppers, onion, chilli slices, ham, pepperoni etc etc. sprinkle a bit more cheese over
the top and grill for about 5 minutes or so on a low heat until the cheese has melted. If you prefer your topping
to be soft, I.e peppers and onions then you can cook these off a bit first to soften. Thats basically it. Very
very easy and quick if you are in a rush

10 Minute Shrimp

Ingredients

  • 1 lb medium shrimp
  • 3 tbsp butter
  • 1/2 tsp or more Old Bay seasoning or seasoning of choice
  • 1 tbsp fresh chopped parsley
  • 1 tsp chopped fresh garlic
  • 1 tsp hot sauce
  • 1 tsp fresh lemon juice



Directions

Melt butter in large skillet over medium heat. Add seasoning, parsley,
garlic, hot sauce, and lemon juice to melted butter. Mix well. Toss shrimp into butter mixture. Stir and cook until shrimp are pink and done. This dish is ready to serve in 10 minutes.

Great quick fix. Serve with potatoes (baked or fried), salad, and of course french bread.

Alligator Stew

Ingredients

  • 1/2 cup vegetable oil
  • 1 quart cut up alligator meat
  • 1/2 cup chopped onion
  • 1/2 cup chopped bell pepper
  • 1/2 cup chopped celery
  • 2 tablespoons minced parsley
  • 1 10-ounce can tomatoes with green chilies
  • salt and pepper
  • 1 cup cooked rice



Directions

Put vegetable oil and alligator meat in heavy 4 quart cooking pot. Add chopped vegetables, parsley and tomatoes. Season with salt and pepper. Cover pot and cook over medium heat for one hour. Serve over hot cooked rice. Preparation time: 1 hour, 15 minutes.

Baked Fish au Gratin

Ingredients

  • 2 pounds white fish
  • 8 slices cheddar cheese
  • 1 teaspoon thyme or oregano
  • 1/4 cup chopped parsley (or 1 teaspoon dried parsley)
  • 1 cup chopped onion
  • 2 tablespoons oil
  • 2 tablespoons flour
  • 1 teaspoon salt
  • 1/8 teaspoon pepper
  • 1 cup milk



Directions

Heat oven to 400 degrees. Place half fish in greased baking dish. Cover with 4 slices cheese. Top with another layer of fish and cheese. Sprinkle with thyme and parsley. Saute onions in oil over medium heat. Remove onions from heat and add flour, salt and pepper. Return to heat and add milk. Stir over medium heat until thick. Pour over fish. Bake 20-30 minutes.

Baked Oysters

Ingredients

  • 2 qts oysters, drained
  • 1/2 cup finely chopped shallots
  • salt and pepper
  • Tabasco sauce to taste
  • 1 Tbl Lea and Perrins
  • 1/2 cup chopped fresh parsley
  • 2 Tbsp lemon juice
  • 1/2 cup melted butter
  • 2 Cups cracker crumbs (these are better if you roll your own)
  • 3/4 cup half and half
  • paprika



Directions

Place layer of oysters in bottom of greased shallow 2 quart baking dish; sprinkle with half of the parsley, shallots, seasonings, lemon juice, butter and crumbs. Make another layer of the same ingredients. Sprinkle with paprika. Just before baking pour the cream into evenly spaced holes, so as not to moisten the crumb topping all over. Bake at 375(F) for 30 minutes or until firm. Serves 12 people.
