Quick Cook Shrimp and Grits

Ingredients

  • 2 cups cooked grits, cooked with shrimp stock, milk or water
  • Salt and freshly ground black pepper
  • 4 tablespoons butter
  • 1/4 cup olive oil
  • 2 garlic cloves, crushed with salt
  • 2 tablespoons chopped fresh parsley
  • Dash of cayenne pepper
  • Juice of 1 lemon
  • 1/2 pound medium shrimp, peeled



Directions

Preheat the broiler.

Season the hot grits to taste with salt and pepper. Heat the butter, oil and garlic in a broiler-proof frying pan. Stir in the parsley, cayenne pepper and lemon juice. Add the shrimp, tossing to coat. Place the pan in the oven and broil 6 inches from the heat, 3 to 5 minutes, turning halfway through cooking, until the shrimp turn pink.

(Alternately, sauté the shrimp over medium heat for 3 minutes, or until they turn pink.)

Divide the grits between 2 plates, put the shrimp on top of them, spoon on the juices and serve. Makes 2 servings.

Sweet and Sour Green Beans

Ingredients

  • 1 quart cooked green beans
  • 1 medium onion, chopped
  • 10 slices bacon, fried crisp and crumbled
  • 1/2 cup vinegar
  • 1/2 cup sugar
  • 1/2 cup bacon grease



Directions

Sauté onion in bacon grease. Place beans (preferably large flat type beans that can be from a can) and all other ingredients in a medium saucepan.

Simmer 10 minutes for the flavors to blend. Add crumbled bacon; stir and serve.

Berry Frothy Burst

Ingredients

  • 1 cup frozen mixed berries
  • 1 cup orange juice
  • 3 1/2 oz (about one fourth a 14 oz pkg) silken (soft) tofu
  • 1/2 banana peeled



Directions

Place ingredients in a blender jar. Cover and blend until smooth. Makes 2 servings.

Orange and Peach Smoothie

Ingredients

  • 2 C. Orange juice
  • 2 C. Frozen sliced peaches
  • 1 8 0z. carton low fat peach yogurt
  • 2 T. honey or sugar



Directions

Blend all ingredients together in blender until smooth. (You can take these same amounts and substitue different ingredients like strawberies, mango-fruit or juice,
etc.)

Orange-Pineapple-Coconut Smoothie

Ingredients

  • 2 C. Orange juice
  • 1 C. Pina Colada yogurt
  • 1 1/2 C. pineapple chunks, frozen
  • 1/2 C. chopped frozen banana (opt)
  • 1 T. sugar or Splenda



Directions

Blend all ingredients together in blender until smooth.
