This recipe comes from my sister-in-law:)

In a skillet, brown your beef (I use ground chuck)with your onions, garlic and seasoning.
Boil your vermacelli til al dente (done but not soggy:)
Once your meat is browned add the 2 cans of tomato sauce and the crushed tomatoes. Mix well. Add to your spaghetti and warm through.

This makes a lot but freezes beautifully. I make a batch and freeze the rest in the Freezer Gladware. My children love this:)

Oven BBQ Chicken

Nov 18th, 2008 Posted in Students | Comments Off

Ingredients

  • chicken pieces (whatever you like-white or dark meat)
  • bbq sauce – I personally like KC Masterpiece(Kraft is usually cheaper and prety good as well)
  • seasonings of your choice (salt, pepper, garlic powder)

Directions

Wash your chicken pieces. Arrange them in an oven safe dish. Season them with salt, pepper and garlic powder. Cover the dish with foil. Bake in a 400F oven for about 45 minutes or until juices run clear. Remove from the oven and remove foil. Drain if there is a lot of juice. Coat your chicken with bbq sauce. Reduce the oven heat to about 300F. Return the chicken to the oven for about 20 minutes.
Serve with baked potatoes, mashed potatoes, rice… whatever and a salad:)

Rotel Macaroni

Nov 18th, 2008 Posted in Students | Comments Off

Ingredients

  • 2 cups macaroni
  • 1 can Rotel tomatoes
  • parmesan

Directions

In a 2 quart pot, bring 4 cups of water, salt and a thin slice of butter or a little dab of butter (this keeps it from boiling over). Bring to a boil and add your 2 cups of dry macaroni. Turn down to about med/med-high and give a stir. Stir it a couple times during your cooktime (about 10-15 minutes once it starts boiling). Once your mac is cooked (not mushy), drain. Pour a can of Rotel tomatoes into the macaroni and grate parmesan over it. Serve with a salad:)
