Boxing Day Turkey Curry
Ingredients
- 228g Cooked turkey
- 2 Tbsp. Chinese Hot and Spicy Concentrate Paste
- 1 medium onion (sliced)
- 2 medium Potatoes (large dice)
- 2 Firm Tomatoes
- 1 Chicken stock cube
- 113g water
- 1 Tbsp. Sweet Chilli Sauce
- 5g Chopped Coriander
- 5g Chopped Spring Onions
- 3 Tbsp. Peanut or vegetable oil
Directions
1. Heat oil in a pan and fry sliced onions until they start to caramelise.
2. Add curry paste and cook for 5 minutes, adding water from time to time. Keep mixing to prevent curry paste sticking to the pan.
3. Next add potatoes, tomatoes and water.
4. When potatoes are nearly cooked, add stock cube, cooked turkey and sweet chilli sauce. Adjust seasoning if necessary.
5. Last of all mix in chopped coriander and spring onions, cover pan and turn off heat.
6. As turkey has already been cooked once it is advisable not to freeze any leftovers.
