Chicken Salad Mold
Ingredients
- 1 1/4 T. gelatin
- 1/4 cup cold water
- 1/2 cup cream
- 1/2 cup chicken stock
- 1 cup mayonnaise
- 2 T. minced parsley
- 2 1/2 cups cubed cold chicken
- 1 cup white grapes
- 1 cup chopped celery
- 1/2 cup sliced blanched almonds
- 1 tsp salt
Directions
Soak gelatin in cold water for 5 minutes; dissolve over boiling water. Add gelatin to cream, chicken stock and mayo; stir until it begins to thicken. Fold in remaining ingredients. Place in a mold greased with mayonnaise. Chill.
Serves 10-12
