Red Onion Egg Salad

Ingredients

  • 1/2 medium red onion
  • Small handful fresh cilantro
  • 3 tablespoons relish
  • 3 tablespoons mayonnaise

  • 1 teaspoon Dijon mustard
  • 12 hard-boiled eggs, peeled
  • 1 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 1 teaspoon paprika



Directions

* Combine onion and cilantro in a food processor and pulse until very finely diced. Transfer to a medium bowl.

* Add relish, mayonnaise and mustard and stir well. Add eggs, whole, then use a wooden or other large spoon to break up the eggs and stir them into the other ingredients. Stir gently to keep eggs from breaking apart too much.

* Season with salt and pepper, then top with paprika.

Note: Preparation time is about 5 minutes.

Makes enough for 6 to 8 sandwiches.
